Good morning! Rise and shine!
It is going to snow in Charlotte today but just a light dusting with no ice so it should be fun.
The weather is absolutely nuts because on Monday it was 65 degrees and I ran in shorts and a tank. This morning it’s 28 and going to snow. Winters in the south are so wacky but I’ll take a random 65 degree day in January anytime!
Enough weather talk…here’s a look at what I’ve been eating the last few days.
Breakfast
It’s a green smoothie! Surprise! 😉

Brunch/Lunch
Weekend omelet with one egg, two egg whites, spinach, cherry tomatoes, avocado, peppers, mushrooms and feta. Blood orange on the side.
Soup and salad. Tomato and red pepper bisque and a salad with kale, spinach, glazed pecans, apples, tomatoes, carrots, turkey and feta with a maple dijon balsamic vinaigrette that I whipped up.
Dinner
Whole Foods hot bar after an apps and wine going away party last weekend. Ponzu grilled tofu steak, brocoli and cauliflower gratin and greens. I highly recommend these tofu steaks from the prepared foods section. They’re full of flavor and have a really nice, firm texture.
Crockpot white chicken chili. Recipe to come soon. I’ve been making this for years!
Lemon Parmesan salmon with dijon lemon roasted brussels sprouts and spaghetti squash with herbs, salt and butter.
Other Stuff
This is almost a nightly occurrence while I’m prepping dinner…love my cheese plates!
Do you snack while you’re making dinner? I’m usually so hungry because I don’t eat until 8:30-9 p.m. that I need a little something to hold me over.
I don’t snack while making dinner, but I definitely sneak a few bites of whatever it is that I’m cooking. Someone has to taste test! 🙂 But it is something I’m trying to limit unless absolutely necessary because it affects my appetite when dinner is finally ready.

Your weather is just like ours…I’m writing this as we patiently wait for the “snow storm” to hit! This weather is totally whacky! Cannot wait for another recipe…I’ve been making so many delicious slow cooker ones. Perfect for these colder nights and ready in minutes. Stay warm and safe!
I usually don’t snack when making dinner, but then again none of my dinners really take TOO much prep! That wine does look delicious. I’ve had a bottle of red wine for a month now and I keep telling myself TONIGHT is the night I will break it open – yeah that still hasn’t happened. Maybe tonight!?
I think wine, cheese and crackers is a perfect meal by itself!!
what i would do for a day in the 30s let alone the 60s right now. so many schools/businesses are closed in WI today (at least for the morning) because it’s ridiculously cold.

I have SUCH a hard time NOT snacking before dinner especially if I’m cooking. I try so hard but we are the same in our dinner timeline. Usually by the time the gym is done, dog walking is done, dinner is at like 7:30-8 so a snack has GOT to be had!

i’m with you. i eat dinner so late because i get home so late that i almost always snack on something or taste test while i cook and i often reach for cheese or a pb rice cake.
I like to snack while cooking dinner if I arrive home hungry, so I can enjoy the cooking process. But I have to be careful, because a few times I’ve really gone to town on the cheese and crackers and spoiled my appetite for dinner. Because I’m a little kid apparently, haha.

I used to be really bad for snacking when eating dinner but I think that’s one of the reasons I gained weight last summer/fall so now I’ve started eating dinner as soon as I get home (usually about 6 pm) and then have a small snack before bed!
my problem is that i never get home before 7, usually closer to 8 so i have to snack on something or i die!
Yes! I absolutely do…..typically I don’t get home until 7ish and we usually don’t eat until 8 or even 9 so I am notorious for snacking pre-dinner (often cheese as well). 🙂 I would starve to death If I didn’t!
I ALWAYS snack while making dinner or before. Usually crackers & cheese. And usually, i ruin my dinner. But i still eat it. ha!
i always end up snacking on something when i’m making dinner! i don’t get to make it very often (only when i’m home on vacation. can’t wait to move out of the dorms into an apartment next year!) but when i do i usually get hungry before dinner is ready. crackers and cheese are one of my favorite snacks!

Are those the frozen brussels sprouts from TJ’s? Did you defrost them before roasting?
