Hi! Hope you are enjoying the weekend! Rather than give you blow by blow details on mine, I thought I would just post the highlights. The weather is beautiful in Charlotte so we’ve been trying to cram in all the outdoor activities that we can.
Trail Run + Happy Hour
Friday afternoon Brandon, Sullie and I headed out to the Whitewater Center for a trail run and happy hour. We completed a challenging but fun three mile loop and were pleased to discover that the trails weren’t crowded at all.
I have to share that Sullie was suuuuper excited about the trail run and leading the pack for the first mile. As we predicted, by mile three we were dragging her behind us. She pulled over in a grassy spot to roll around when we were done and then proceeded to drink her water too fast and most of it came back up. Clearly, she has not learned the lesson of not going out to fast. 😉
We grabbed a beer on the patio that overlooks the water after our run. Sullie enjoyed lounging in the sun frog leg style!
Oktoberfest at The Waldhorn
We have an authentic German restaurant in Charlotte, The Waldhorn, that puts on a huge Oktoberfest every year. Friday evening we decided to venture over there with my in laws for dinner and festivities. The wait for dinner was over an hour long so we put our name in and then headed outside where we were highly entertained by the Gootman Sauerkraut Band.
I haven’t been to an Oktoberfest or eaten German food in years.
When we were finally seated, I opted to bypass the German meat dishes for the vegetable strudel. It was served with a roasted red pepper sauce and incredible. Packed with all kinds of fresh veggies.

Dawgs Win!!!
The Bulldogs played one of our biggest rivals last night, the Tennessee Volunteers. Well, we decided around 11 a.m. on Saturday morning that it would be easier to have everyone over to our house to watch the game rather than trying to stake out space at a bar. Plus, it was a nice evening and we wanted to hang out outside. We set the TV up outside and had the fire pit rocking.
That decision led to my Saturday becoming a frenzy of cleaning and cooking. Brandon tackled outdoor preparations/laundry while I cleaned inside. I finally broke around 3 p.m. for a trip to the grocery. Here’s what was on the menu…
– Chips and salsa
– Homemade spinach and artichoke dip <— Made up as I went and turned out really well. Will share the recipe!
– Chili + all the fixins
– Vegetarian Chili
– Cornbread muffins with cheese and corn
– Salad
– Homemade chocolate chip cookies
My chili night was a crowd pleaser and the giant plate of cookies was demolished. Win! And even better than my food win was the Dawgs win over Tennessee!

That whitewater center look really fun, you are lucky to have a place like that so close! We are also waiting for our 12wk old golden to learn to run, for now she just runs straight into my legs or zigzags back and forth 🙂

Although I was born and raised in Atlanta, I went to U of Arkansas before finishing up at GA state and the Hogs beat Auburn. Woohoo! (sorry No dawgs fan here!!)
Highlight of the weekend was beating the crazy rain we’ve had for 2 days straight in Florida — and getting my last “long run” in before my marathon next Sunday!
Unfortunately, the Iowa Hawkeyes lost… not having a good season!
