We have some catching up to do! After my long, photo heavy Charleston recaps I didn’t have it in me to blog much more than the giveaway winner last night.
I had MLK day off from work. Our office was open but we have the option to take MLK or President’s Day as a holiday. Honestly, I would have rather of had President’s day in mid-February but MLK day worked out better scheduling-wise and I’m not going to turn down time off!
I had one thing on my mind Monday morning…YOGA. I doubled up on classes and attended a 60-minute power mixed and 90-minute hot vinyasa. I loved every second of it – including what felt like millions of chaturangas, mountain climbers and side planks. I could wring sweat out of my clothes and Yogitoes mat after class – gross and awesome.
It was closer to lunch time than breakfast when I got home but I was still craving a big bowl of oatmeal.

After oatmeal I went on a cleaning frenzy. Our weekends have been so busy that there has been no time for cleaning/organizing the house. I start to feel a little stressed by the messiness after a while so it was nice to get everything back to normal.
My belly required an afternoon snack after all the cleaning.

I had things to return/exchange at the mall last night and Brandon hobbled along. He is feeling majorly sore from running on the beach in his Vibrams. I have to admit that his soreness is pretty entertaining. He can’t get mad at me for laughing at him because I warned him about the possible consequences!
We had a buy one, get one coupon for Brixx so we celebrated the last night of our long weekend with pizza.
I ordered my very favorite – the Artichoke Pizza. Mozz, artichokes, pesto, sundried tomatoes and roasted red peppers on whole wheat crust. It was delicious, as always!
I enjoyed my day off at home and think that I could get used to the housewife life. ๐
But before I knew it,ย it was over. My alarm went off at 5:15 a.m. and I started today with an ashtanga practice. I haven’t practiced at the studio in a week and a half because of the ice last week. My practice felt really good and made me so ready to get back to teacher training this weekend.
Breakfast was overnight oats at my desk with the last of my Silk Nog. Until next year, Silk Nog. I’m so glad I discovered it! Lunch was ordered in for a meeting.
I ordered a vegetarian boxed lunch. It was kind of boring and way too big. The vegetarian sandwich was just lettuce, tomato (not in season), sprouts and peppers on whole wheat. No cheese, avocado or spread of any kind. I only ate half of it. I gave away my chips and split the cookie with a co-worker who spotted it on my desk and Tweeted about wanting to steal it from me!
After a trip to Trader Joe’s to restock, I came home to find this.
Brandon made an appetizer cheese plate with horseradish cheddar, colby jack, brie, apple slices and crackers.
We’re having chicken and dumplings for dinner and watching The Social Network. I haven’t seen it yet so I’m excited! I’m actually going to watch the movie and not blog or play on the computer during it. Imagine that! ๐

I love cheese, cracker and fruit plates. It’s the best appetizer! Or dessert. Or late night snack. ๐

I took a yoga class for the first time in awhile tonight and it completely left me wanting more. I can see why you love it so much!

As for the Vibrams — yes, definitely tell him not to run more than 2-3 miles at first in them. (I myself have two pairs of Vibrams.) They are pretty great, but you need some getting used to ๐ It also helps to walk a lot in them.

Yum – have you tried the “One Veggie” at Pizza Peel? It’s my favorite pizza in Charlotte. It has Red Sauce, Mozzarella, Roasted Garlic, Mushrooms, Goat Cheese, Artichokes, Pesto. I always add sundried tomatoes too. It’s life changing! ๐
I wonder what it would take to have Jake fix little plates like that for me ๐
The housewife thing is fun at the beginning, but your house can only be cleaned so many times in one week! I’ve been enjoying staying at home for about 9 months now, but I’m ready to find a new/interesting job that I really enjoy!
P.S. I made your cheesy beer bread last night and it was a hit! Taking the rest to a lunch date with my neighbors today!
