It’s 9:30 and I just sat down to relax for the first time since I got home from teaching BodyPump. I just inhaled a bowl of light vanilla ice cream topped with a tablespoon of Dark Chocolate Dreams and I’m ready to blog. And then I have about a million more things to do to get ready for our trip to Atlanta this weekend and my busy workday tomorrow. Fun times.
I started the morning with a bowl of overnight oats.
I am so happy to report that I now have Brandon eating overnight oats. He requests that I make him a bowl when I’m preparing mine at night. I’m unhappy to report that I inadvertently switched our bowls this morning. I make mine with dried cranberries mixed in, less sweet and almond milk instead of cow’s. We realized it about halfway through. Bummer.
I created a hummus plate for lunch today.
Toasted whole wheat pita bread, sliced cucumbers, grapes and Sabra Roasted Pine Nut Hummus. I still think that Sabra has the best store-bought hummus – I love the texture. Luckily, it was on sale at the grocery this week. I’m a weirdo and I like to eat all of this together. I spread hummus on the pita, top it with a cucumber and then have a grape with each bite. Yum! This is one of my favorite lunches.
After lunch I had one of the fresh fig bars that my mother in law sent over and took some shots of them for Bakin’ and Eggs. I’ll be posting the recipe soon. They are awesome and we’re in the height of fig season.
Work was busy, busy, busy this afternoon. I’m so happy to report that I’m still absolutely loving my new job and so happy every day that I’m there! 😀
I taught BodyPump after work and it was wonderful. I was ready to get a good strength training session in and went heavy on all of my weights tonight. I was feeling good! I love teaching, love my co-instructor Cynthia and love the Y. We just have the BEST members and friendliest staff.
I made shrimp and tofu pad thai for dinner in hopes that I could blog the recipe on Bakin’ and Eggs but it just wasn’t my favorite.
It was good but in need of some modifications to meet our pad thai standards. I’ll keep working at it.
And now I have to get back to it. I still need to pack for the weekend and prepare for yoga and work tomorrow. We’re heading to Atlanta this weekend to visit my family and meet up with our law school friends. We haven’t all been together since graduation and we’re planning dinner and a Braves game. Can’t wait to see everyone!!!
