I’m at the beach!
It feels so good to see the water. I haven’t been to a beach since late last summer and I think that may be a record for me…far too long!
I’m in Hilton Head, South Carolina but not for a relaxing weekend of lounging beachside with drink in hand. Quite the opposite actually. I’m here with our director of CrossFit, Sean, for CrossFit Endurance training. It’s the arm of CrossFit that is designed to help endurance athletes improve performance. I’m so excited about the training because I’m going to learn tons about ideal running form and how to analyze and coach athletes to improve their running.
While it will be interesting we will also be working hard. We were instructed to bring a jump rope, practice double unders, be able to jump rope barefooted for 5 minutes and watch a bunch of running drill videos online. I’m more than a little scared of what awaits me. We’ll be in training Saturday and Sunday from 8 a.m. – 4 p.m.!
I’m as prepared as I can be. I have a huge manual printed out and I went a little crazy with the fuel today. I went to EarthFare and stocked up. Electrolyte enhanced water, electrolyte powder, coconut water, trail mix, peanut/almond butter packets, bars, bananas and apples. I’ll have an update for you tomorrow on my experience with the first day. For now, here’s a look at what I’ve been eating since my last update.
Thursday night dinner was sautéed rainbow Swiss chard, black beans, grilled chicken and roasted plantains.
I had overnight oats this morning after a hot vinyasa class. It’s been a long time since I’ve made overnight oats. I need to start incorporating them into my breakfast rotation more now that it’s getting warmer out.
Lunch was extra delicious. Leftover artichoke pizza from Brixx with a side salad. The salad featured baby spinach, grilled chicken, roasted plantains, tomatoes, avocados and homemade honey mustard.
Sean and I grabbed Mexican (outdoors, waterside…ahhhhhh) for dinner tonight. Chips and salsa, of course.
Followed by a fajita taco salad. The salad was just so-so but I doctored it up so much it didn’t even resemble salad anymore! 😉 I covered it with guacamole, jalapeños and salsa.
I need to start winding down and preparing for tomorrow. I’m nervous but really excited. Pray I survive this, please!

Wow this sounds so cool! I’d be really interested to hear about the running form. Could you do a post on what you learned about that in detail? Good luck!! Can’t wait to hear about it!!

I’ve been having overnight oats all the time! Thank you so much for inspiring me to give them another try! They are so delicious with a bit of raspberry jam and sunflower seed butter 🙂 (I’ve also started to make them with cottage cheese in place of the yogurt and its a really delicious combination! The texture is still doughy and thick).
Good luck! I would really love to hear what you learn about ideal running form…I’m beyond tired of being plagued by injuries and maybe this would help me.
What an awesome experience! I’ll be in HHI next week – top bad it wasn’t this week! I would have loved to crash the crossfit party and try it out 🙂
You’ve got some good snacks there. I’m in love with Justin’s Maple Almond Butter!!!! It is Pose running that you’ll be learning? I’m really interested in this!

Wow, sounds super crazy! I’m sure you’ll learn tons though and have a lot of fun. Hope its a great time for you!
I can not get a handle on double unders, grrr. I attribute it to my old age or sometimes I blame the jump rope (my trainer, who is 20 yrs younger than me, rolls his eyes. He does lots of that with me). If you get a chance I would love to see a video of someone doing them – and if you have any helpful tips I’d love to hear them too.
Did you eat at San Miguels? I LOVE Hilton Head, my family makes a trip there every year!
I’m glad there’s someone else out there who loves avocado as much as I do! I find myself getting ready to cook lunch or dinner and I’m asking myself “What can I make today that I can put avocados on?” 🙂 They never get old!!
