Hi and hope that Monday was kind to you!
I know I sound like a broken record but my Monday was so good. With each day that passes I feel more and more confident that I made the right decision to take the leap of faith and change careers. The big news of today is that I actually have a personal training position with a great club. I feel so blessed that this opportunity came to me in the midst of the transition and I can’t wait to get going with the training. It seems like all of the pieces of the puzzle are falling into place…now the challenge will be figuring out how to manage my schedule and finding the balance that feels right.
And now details on the past couple of days. It’s been so nice having Brandon’s cousin staying with us. Last night we all met Brandon’s parents for dinner at Mellow Mushroom.
I am fairly certain that if you went back through my blog over the past couple months you would find that we’ve eaten pizza at least once a week. It’s becoming a problem. Why is pizza so delicious?
We started with a Lil’ Greek salad with Mellow Mushroom’s amazing Esperanza dressing.
The girls split the Kosmic Karma (the pesto swirls suck me in every time) and the boys split something meat-centric. I had two slices.
I taught 6 a.m. BodyPump this morning. Class was wonderful. I love the morning crowd! I came home ready for a big bowl of oatmeal.
Apple cinnamon oatmeal made with oatmeal, raisins, ground flax, cinnamon, brown sugar, salt and oat bran. Topped with apple butter and peanut butter.
I had a mid-morning meeting at the gym and ended up teaching an impromptu yoga private. After the session I hit the treadmill for an easy three miles. I was starving when I finally made it back home at 2 p.m.
The leftover Mexican brown rice from Saturday’s fajita feast was calling my name. I started with a bed of spinach and then added the rice, sour cream, salsa, guacamole and a sprinkle of cheese and hot sauce.
Sullie has loved having Jason’s dog Goose around to play…although right now she is passed out next to me in her bed. They’ve been playing so hard! Goose has tons of 7-month old puppy energy but Sullie has definitely been keeping up. It’s catching up with her. She seems sore! (Which I would totally expect given the way they’ve been wrestling!)
And finally, I had no idea what I was going to feed my house full of men tonight (my father in law came over too to watch Monday night football) when my brother-in-law dropped off a bag full of green tomatoes from his garden.
Enter Fried Green Tomato BLTs. I didn’t get home from teaching yoga until 7:30 so these sandwiches were easy to throw together. On the side I madeΒ a salad and homemade sweet potato fries (I just sliced sweet potatoes, tossed them in olive oil, seasoning salt and cinnamon and baked at 425 for about 25 minutes.
Alarm is set for 5 a.m. again tomorrow so it’s bed time.

Is that a Great Lakes Brew I see in the pic! Nice. That’s like liquid gold up here. I’m hoping to visit the brewery soon.
holly – it wasn’t! it was something else in a great lakes pint glass but i have had their beer and it is yum-o! π
We had mellow mushroom for the first time ever last week since moving to Georgia. The place sparked our curiousity because we don’t have one in Richmond. Andddd we also got the Kosmic Karma! The pesto and sundried tomatoes were calling our names π I’m glad everything is falling into place for you! The goldens are precious!

I love love love the Esperanza dressing…I don’t know what they put in it, but it has seriously addictive properties. Sometimes I dip my pizza in it.
uhhh our pizza made quite a few dips into the esperanza. it is HIGHLY addictive.

I love fried green tomatoes, what a genius idea to make them into a BLT. Served with sweet potato fries, I bet it was amazing!

I just recently bought the NASM training textbook on Amazon and am trying to figure out the best way to begin studying/reading up on the information. I want to give myself some time before buying the exam to really feel comfortable studying again (it’s been a good six years since those College cram sessions). Do you have any advice? Also, did you buy the study guide as well, and did you find it to be effective? I’ve been wanting to quite my dead end job for years in order to pursue fitness/health and you’re transition has pushed me to realize it is possible! Just do it!

Fried Green Tomatoes = my favorites! Wish I could cook such inspired meals when I come home late from classes. We always go out – haha!

It sounds like life is full of great new challenges. I always find change to be a challenge no matter how much I wanted that change. It looks like things are going beautifully for you π
fortunately, i’m pretty okay with change and love a good challenge so although this has been pretty scary it’s been exhilarating too!
