Good morning and happy hump day!ย ๐
I’m enjoying aย cup of coffee and writing a morning post since I missed you guys last night. We had dinner with friends and I was too exhausted to even turn on my laptop when we got home.
In the spirit of Wednesday/Hump Day…what is one thing that’s getting you through the week?
I am looking forward to this weekend! We are going to the beach with our friends Lee and Ashley and we can bring Sullie. This is a picture from our last beach trip with them in August. I can’t wait to hang out on the beach, relax and sleep without an alarm for the first time in a month!!!
Backing up to the Tuesday recap. I kicked off my day with an early morning ashtanga practice but it was rough. My body was too tiredย and was definitely was asking me for some rest/rebuild time after the insane amount of strength training classes I taught last week. Strength training fatigues my muscles like nothing else!
I had overnight oats at my desk when I got to work before heading out to a dentist appointment. I have always been a “cleaning every six months” kind of girl but I slacked on finding a dentist when we moved to Charlotte so it had been too long. I paid dearly for it yesterday…the hygienist and dentist I found were amazing but I had quite the cleaning. My mouth was SO sore for the rest of the day but I didn’t have any cavities!
I picked up a salad from Something Classic on my way back to work although I had no appetite after my appointment. I finally broke into this around 2:30 but really just picked at it – so much food! This was the salad trio with pasta salad, fruit and tarragon chicken salad on a bed of baby greens.
Our friends Lia and Matt invited us over for dinner tonight since we are never both in town on the same weekend. Crazy schedules! I was in charge of dessert so my mind immediately went to strawberries since they’re on sale for $1.25/package at our local store and looking beautiful.
I decided to make a Strawberry Crumble. I love, love, love fruit desserts and this was my first time using strawberries as the main ingredient in a crumble/crisp. It was awesome!
I used a recipe from The Gourmet Cookbook as a guide but made quite a few changes so I will post the recipe on Bakin’ and Eggs soon so that you guys can get in on this strawberry goodness.
Lia and Matt served a great dinner. Spinach salad, grilled asparagus, grilled pork chops with a marinade recipe from Lia’s dad and mashed potatoes. Vino and dessert to finish it all off.
This week has been pretty heavy on the desserts…hope you don’t mind. I’ve been a little more “Peanut Butter Dessert Eater” than “Runner!” But dessert is my favorite and I’ve been lucky to have some good ones the last few days!

That pudding looks divine! Did you serve it hot or cold? I can imagine it would make a lovely winter dessert straight out of the over hot, with thick hot custard ๐
Getting me through the week is planning for a Morroccan dinner I’m cooking for our friends on Friday night, and looking forward to my first long long run in a while.
I served it warm with ice cream! YUM!

I will never complain about dessert-heavy posts! Everything looks so delicious. I am loving strawberries lately, too. This week is the last week before our spring school vacation. Thoughts of a week off are powering me through the next few days. I’m also getting super psyched about Marathon Monday in Boston! It’s like a holiday for me ๐

Aww! I LOVE this family picture! Ashley-cation starts Friday while the Mr. is in ATL with the boys. I am mostly looking forward to a pedicure and dinner with some of my favorite gals Saturday night. Have fun at the beach!

Well, the weather for the beach is 70% chance of thunderstorms so I’m not sure how much sun I’ll be soaking up.
