I think yesterday’s busy day caught up with me today. First, I woke up starving when my alarm went off at 5:15 a.m. to teach BodyPump. And then no amount of caffeine could get me going. And trust me…I drank a lot. Luckily, I had a pretty chill day. I taught BodyPump in the morning, trained a client at lunch and then taught yoga tonight.
I immediately started on breakfast when I arrived home from teaching BodyPump and made a big bowl of banana oatmeal.
I made a quick lunch/snack before I left to train my client. Half of a whole wheat bagel with mayo, dijon mustard, avocado, spinach and cheddar jack cheese. It’s been forever since I’ve had an open-faced sandwich. Pear slices on the side.
Later this afternoon I inhaled the last maple oatmeal scone along with a soy latte. I have a serious, serious cake or cupcake craving right now. I stopped by three different bakeries today and they were all closed so I had to make do with a scone.
This is a picture of last night’s dinner but I had leftovers tonight. It was so good! Tempeh and Asian veggie stir fry with Trader Joe’s Island Soyaki sauce over jasmine rice with a healthy dose of Sriracha. I have been mixing the leftover rice into Sullie’s meals so I made a batch of quinoa to serve it over tonight. I decided that I prefer the rice.
Two things about this dinner. First, I am so happy that I discovered the Island Soyaki sauce. It is seriously addictive and awesome in stir frys. Second, I generally like tempeh but this may be my favorite preparation of it ever.
And now I’m watching The Bachelor. What am I doing with my life? I cannot get sucked into this season.
It’s another early morning tomorrow and I am slammed with teaching, training and appointments. I need to rest up tonight!
I’m watching The Bachelor too. You watch one episode and they suck you in!! The oatmeal and open faced sandwich both look delicious!
I miss TJ’s Island Soyaki sauce! =( Now that we live in El Paso, TX, our nearest TJs is over 3 hours away. So sad.

I do not watch these shows….because I know me…and then I get addicted…so I skip…lol. We’ve got these dutch bachelor shows….one was recorded in Curacao..that one I did follow only because of Curacao. You like oatmeal too hey? Oatmeal, now that is something I’m really addicted to. xx
i would watch a show recorded in curaçao too…and then constantly wish i was there! 😉 love oatmeal…especially on cold mornings!
Jen, I have a serious cake/cupcake craving thing going on too! Despite having 2 baby showers lately, neither has had cake. What the hizzell? LOL.

i guess none of them are open on mondays…just tuesday through saturday. i was majorly bummed! will make up for it today! 🙂
The Bachelor is oddly addicting and I’m not sure why! I mean let’s be honest, some of those girls are crazy! Total bummer that the bakeries were closed! Maybe because of MLK Day???
I decided to boycott The Bachelor this season but for some reason I seem to like The Bachelorette much better. I can’t wait for that to begin. A few of us at work have played a Fantasy Bachelor or Bachelorette game which is quite fun. It seems to make the men want to watch a little more since there is a competition involved 🙂
The soyaki sauce is amazing! Awesome marinade for grilled salmon too. I crave it!
The Tempeh and Asian stir fry looks delicious! I’ve been meaning to cook this for dinner and always forget to pick it up at the grocery store. This picture has convinced me 🙂
I know that you posted about oatmeal this morning, but I just wanted to tell you that I tried your version of overnight oats and LOVED them! I tried OA during the summer, but something was just off.
