Hi friends. Today is a day where I’m going to let the food do the talking, as I don’t have much to add as an intro to my recent eats.
Simple is best so let’s get right to it.
BREAKFAST
Cottage cheese scrambled eggs with sauerkraut, avocado and grapes. I don’t understand this recent sauerkraut obsession but I’m craving it something serious.
So on a related note…toasted Dave’s Killer English Muffin with butter, mashed avocado, sauerkraut and cottage cheese scrambled eggs. Throwing it back to my “most addictive toast ever” days.
The team at Thrive! sent me some of their ready to blend smoothies. I was a little hesitant and waited a long time to try one.
You open up the cup and fill it to the top with liquid. (I used coconut water. You can also use milk of choice.) Then you dump it all in the blender and blend away.
I was super impressed. It tasted great (with no added sugar!!!) and texture was great. Finn enjoyed it too! Thrive! Smoothies are now available at Target. I give them two thumbs up.
LUNCH
Massaged lacinto kale, lentils, feta, pistachios, avocado, feta and Tessamae’s Green Goddess.
My current favorite smoothie combo…so bright and purple!
- Frozen cherries
- Frozen blueberries
- Frozen figs
- Frozen raspberries
- Frozen bananas
- Frozen cauliflower rice
- Medjool date
- Peanut butter
- Plain full-fat greek yogurt
- Almond milk
Maybe one of the weirdest salad bowls I’ve ever assembled but totally worked. Massaged lacinto kale, lentils, feta, pistachios, sauerkraut, hummus and cottage cheese.
Farmers market salad! Greens tossed in my honey balsamic vinaigrette and topped with avocado, sun gold tomatoes, pecans, cucumbers, mountain apples, dried cranberries and feta.
DINNER
One-skillet chicken with buttery orzo via Epicurious. The orzo was cooked like risotto so I decided to treat it that way and add lots of freshly grated parm. The be honest, I liked the fennel leek orzo more than the chicken!
So the next evening I shredded the leftover chicken on top and added cherry tomatoes. They were a great addition to this dish.
Welcome to a dinner that my dad wouldn’t touch with a 10-foot pole. Lentils, veggie burger, sautéed spinach, fried egg, sauerkraut, cheese and Tessamae’s Creamy Ranch. It’s weird but I swear it just works.
I got it together the next night and cooked a real dinner. This is chili-lime mahi with mango cilantro sauce served over coconut cilantro lime rice with sautéed spinach. This is one of the best things I have cooked in a very long time and I will be sharing the recipe in the next couple of weeks. It was also crazy easy!
Same dinner but with roasted cauliflower instead of spinach.
PRO TIP: add shredded cheese to your cauliflower in the last few minutes of cooking to send the deliciousness factor through the roof.
Not much to say to wrap it up other than two things…first, can’t wait to share my recent eats for this week after my farmers market trip on Saturday. They’re off to an amazing start! Weirdest dinner you like but your fam/significant other/roommate just cannot understand?
1. Just like you: salt and cheese!
2. I love avocado and full fat vanilla Greek yogurt
3. Peanut butter cheese sandwich, chicken soup with sour cream on top
I need you to come cook for me! Everything looks so good-especially breakfast!
1. Cauliflower au gratin – my dad makes this and it’s DELICIOUS! I always request it when I see them 🙂
2. I’m not a smoothie fan anymore. I used to be…no clue what happened? (Fav was always frozen mangoes!)
3. Most of my meals are strange/boring! Protein, veggie, starch. For breakfast, lunch and dinner! Usually a lot of potatoes and rice (sometimes plantains, occasionally pasta) and variety of veggies: bok choy, Brussels, broccoli, kale, etc. Today’s breakfast is pork sausage with sautéed broccoli and diced yellow potatoes with a large dollop of TJ’s Greek feta dressing! Quick and easy meals, and I don’t even have children, haha!

How do you think the Thrive smoothies compare to Daily Harvest?? I am liking those (Daily Harvest) but also like the idea of picking them up as needed.
I have honestly never tried the Daily Harvest smoothies! I am drinking my second Thrive smoothie as I type this and it’s good.
