Good morning and happy St. Patrick’s Day. Fun story. My high school mascot was Lucky the Leprechaun, we were the Fighting Irish and our colors were green and gold. Needless to say, St. Patrick’s Day was always a big deal in our town and we had all sorts of events themed around it all month long.
I also grew up close to Savannah where St. Patrick’s Day was a HUGE deal but I never made it to River Street to partake in the festivities. (And I don’t feel like I missed out on anything…haha.)
I did travel to Ireland with my grandmother when I was graduating from high school and I can say without a doubt that it’s one of my favorite places that I’ve ever been.
My favorite thing about St. Patrick’s Day is probably eating corned beef and cabbage, which I had early when I was visiting my family in February! 🙂
This makes me think that I might switch up my lunches this week and get some corned beef for sandwiches. YUM.

Here’s a few things that I ate last week, along with my workouts for the week.
LAST WEEK’S EATS
Most mornings I ate a smoothie bowl, one morning I felt like eggs and fruit. I had two eggs scrambled in coconut oil, a banana and some strawberries.
Smoothie bowl and coffee with collagen protein. Pretty much what every morning looks like. I try to eat things other than smoothies…but then I just want a smoothie.

Whole Foods salad bar. I met three of my girlfriends for lunch one day and made a big (and very tasty!) salad…spinach, kale, quinoa, chicken, fennel, edamame, dried cranberries, cashews, tomatoes, red cabbage, feta, artichokes, mushrooms, honey mustard and balsamic.
My other meal out was this bowl from YAFO. Two of my friends took my yoga class on Wednesday evening and we grabbed dinner together after. This was spinach and kale, couscous, chicken, hummus, babaganoush, tatziki, feta, olives, two different kinds of cabbage slaw stuff, beets and two different sauces. Enjoyed with the fluffiest, best bread on the side.
I ate this salad combo two nights in a row. I bought frozen wild-caught ahi tuna at ALDI and defrosted two of the tuna steaks. I seasoned them with salt and then crusted them with sesame seeds and seared them in a skillet with avocado oil.
The salad was baby spinach tossed in a miso dressing, feta, marcona almonds, dried cranberries and half an avocado. Buttered sourdough toast on the side.
And I know you’ve already seen this photo but dinner two nights was homemade pizza with Italian chicken sausage, sautéed portobellos and artichokes. Salad on the side. (And lots of ranch for pizza dipping!)
When it comes to ETC…the one day that I didn’t have a smoothie for breakfast, I had one for a mid-afternoon snack. Haha. Stopped at Clean Juice and grabbed a protein smoothie. This was The Chocolate One.
Ben + Jerry’s AmeriCone and Talenti Raspberry Cheesecake with Whole Foods store brand chocolate sauce. Ice cream nightly. Also, on Monday night I had a few chocolate chip cookies that my friend Caroline baked for me! 🙂
I’ve also been eating a lot of these collagen energy bites for snacks here and there. I keep them in the freezer and then pop them out when I need a snack to take on the go or an afternoon pick-me-up.
LAST WEEK’S WORKOUTS
Monday: 4 mile flat run with a friend who was also pushing a stroller and Zoey + yoga practice
Tuesday: 2.75 mile walk
Wednesday: 5 mile flat run with Finn and Zoey
Thursday: 3 mile walk
Friday: 3.3 mile hill run with Finn and Zoey + 1.7 mile walk with Finn, Zoey and Sullie (Sullie was feeling left out so we scooped her up and did a cool-down walk)
Saturday: 2.5 mile walk + hot yoga practice
Sunday: TBD but most likely just a long walk, maybe a short home weight circuit before but depends on Finn’s nap
This was a great week of workouts for me. One of my best friends and I have decided to make Monday mornings a standing weekly run date and I LOVE IT! It’s the best way to start my week. Running has also just been feeling really good lately and I’ve also enjoyed taking Zoey with us. <3

My boyfriend and I made corned beef, cabbage, carrots, and potatoes for our St Patrick’s meal. Corned beef is a favorite of mine but I hardly ever make it, so it tasted extra good yesterday.

The fact that you’re running with a stroller AND a dog is super impressive! The stroller is hard enough for me! Super mom (dog and baby) status.
We don’t really celebrate and actually even forgot about it until we were out for lunch today and wondered why it was so busy! I often run with my dog and the baby. If we leave the house for a run without her she gets so mad!! I had Mexican food the other night and the guacamole was SO GOOD!

We made our annual St Patrick’s Day dinner last night – corned beef, carrots, roasted red potatoes, and roasted Brussels sprouts (in place of regular cabbage, which none of us really like).
I run with one of our dogs (the other can’t be bothered) for all my early morning runs. An almost 2 year old Brittany (spaniel), he particularly likes when we do speed workouts, like we did this morning, as my usual easy pace is barely a trot for him!
Best thing I ate all week is a tie between homemade pizza (Sat) and Mexican dinner out (Thurs).
