Hi. I’m back in Charlotte after a whirlwind 24 hour trip to Cincinnati for Wanderulst 108. I got in bed at 8:30 tonight (wild and crazy Saturday night!) because I am so wiped out. I’m going to type up this post and then Netflix for a bit.
When it comes to recent eats, I’m happy to report that my appetite has been back in full force for a couple of weeks now. I’ve found that it works best to cook something and then eat some iteration of it again a day or two later. I enjoy cooking when I can squeeze it in but also appreciate having leftovers in the fridge that I can throw together for an easy dinner.
Here’s what ate last week!
BREAKFAST
Two scrambled eggs, a slice of pumpkin apple bread and grapes.
Green smoothie. I’ve kept them simple this week with just strawberries and bananas for the fruit (and of course peanut butter).
Sweet potato breakfast bowl with granola and peanut butter.
Another strawberry and banana smoothie made with frozen cauliflower rice because I was out of spinach.
LUNCH
Tuna salad sandwich with avocado and colby jack.
Salad with massaged kale, pears, avocado, turkey, pistachios and dried cranberries.
Tuna melt on sourdough with colby jack.
Salad with arugula, dried cranberries, pears, goat cheese, leftover pumpkin sage farro and pepitas.
DINNER
Tahini turmeric marinated baked chicken thighs with pumpkin sage farro and steamed green beans.
Frozen pizza with kale salad.
Another night of tahini tumeric chicken but with roasted broccoli.
A really yummy pasta creation with chicken sausage and artichoke hearts with tomato basil sauce. Leftover broccoli on the side.
ETC
Lots of pumpkin apple bread! Also the usual suspects like cookies and ice cream!
Off to Netflix and chill. 🙂

Tuna salad…yes or no?
Hi Jen, I watched and loved The Marvelous Mrs. Maisel thanks to your recommendation. I was so sad when I finished the season (can’t wait for more to come out soon!!). Since finishing that show I’m now watching The Crown which I also LOVE. I believe it’s a Netflix show. Let us know if you watch and enjoy it. The first episode was a little slow to me but I’ve loved every one since.
I started The Crown last winter but never finished it. I am going to go back and rewatch from the beginning! 🙂

Hi Jen, glad your apetite is back! The food looks delicious as always. I’m paradoxically craving ramen bowls and stir fries atm (becoming addiced to a really sweet and quirky youtube channel called Asian at Home), with lots of steel cut oat porridge in the morning, but looking forward to slow cooking some bolognaise this week too. I’m waching a series called Strike, it a miniseries made after the detective novels written by JK Rowling (under the pseudonym Rober Galbraith). It’s really good!
I will have to check out that YouTube channel! I’m also ready for some slow cooker meals…yum! Thanks for the series recommendation.
Could you please share that pasta/chicken sausage recipe?!
It was super simple! I just sliced a tomato basil chicken sausage and sauteed it with some marinated artichoke hearts. Then I added a jarred tomato basil sauce. Mixed that together with cooked pasta!

I don’t have any specific advice as every woman’s body is so different but a mix of a healthy diet and movement while also having patience and grace with yourself. Remember that it takes nine months to grow these sweet babies and what an incredible thing your body does to do that. <3

what’s your recipe for the tahini turmeric baked chicken? is it just your tahini turmeric dressing that you use for a marinade, and then bake the chicken in it? It looks SOO good!

The chicken marinade was a mix of tahini, soy sauce, water, lemon juice and zest, coriander, cumin, turmeric, garlic, rosemary and parsley.
That kale and pistachio salad you had for lunch looked so yummy! Love the mix of things you put into it!
I really love pistachios on salads! A great way to mix it up!
