Hey there. Hope it’s been a good weekend. I’ll have the weekend recap for you tomorrow but I got it together enough today to put together a meal plan for the week and do all the shopping. I’m excited about 0ur week of meals so I wanted to share the plan with you along with last week’s workouts since I don’t do either often anymore.
I got motivated to meal plan this week because I just started receiving Cooking Light again. You’ll find two recipes from recent issues in my meal plan in addition to some recipes from Epicurious (you know it’s my fave source), Serious Eats and Pinch of Yum.

Grilled burgers with leftover potato salad and tomato and cucumber salad with peach dressing

Grilled halibut, baby bok choy and eggpplant with Korean barbecue sauce (I may use another firm white fish because halibut is so expensive!)

Spicy fish taco bowls with cilantro lime slaw (except I’m going to sub sauteed shrimp for the fish)

What’s on your meal plan this week?
What was your best workout last week?
I love that you plan in to use your leftovers when you meal prep–I try to do that too! This week, I’m super excited to try a new tuna cake recipe that I found! My best workout last week was the 5 mile race that I ran! I set a goal and beat it–not a whole lot feels better than that!
I am huge on meal prepping for my breakfast and lunches to take to work! Lately I’ve been taking the eating route making a batch of meat, this week chicken, with roasted veggies and then hard boiling some eggs and chopping up some fruit!
Ohhh yess! I made the spicy fish taco bowls from Pinch of Yum last week! They were awesome. For me, the avocado REALLY made the bowl. The added creaminess of the avo balanced out the acidity of the slaw. That tomato and cucumber salad with peach dressing sounds so refreshing. I’ll have to add that to my meal plan this week (:
Hi Jen! What is your favorite high protein, low carb meal/recipe? I don’t eat beef or pork, and am having trouble finding some good and actually tasty meals that fit my needs. 🙂 TIA!
this week my meal plan has chicken ceasar salad, tom/basil/mozz salad, homemade meatball casserole, tacos, and of course followed by taco salad, a dinner out at a fancy place to celebrate a new job (where i will have melt in your mouth steak), wow lots of red meat this week. odd how it works out. i guess i must have been craving it ! last week my best workout was a HIIT workout i sorta did myself.
This week we are having black bean lentil soup (makes great leftovers, I’ll probably eat it for lunch all week), roasted vegetable baked ziti, honey-lime sweet potato and black bean tacos and probably a carmelized onion, tomato, spinach and goat cheese pizza.
Probably my best workout last week (well, Sunday) was a 15k race. I didn’t really “race” it (I mean, it is July in Texas) but managed to get a pretty good time.
That coconut lemon grass noodle bowl sounds so unique! Thai food is always so flavorful. This week will be full of delicious dinners for me! Last night, I made mango honey salmon with blueberry, parsley rice, and mango salsa with a side of steamed zucchini- OMG so good!!! Tonight, I’m making roasted chicken, grapes and brussles sprouts topped with walnuts. Later in the week, I’m thinking crockpot blueberry pulled chicken with cornbread and maybe some sort of pasta dish. My best workout from last week was a lower body strength and HIIT workout I made up. You bet my booty was sore 😉 !

I also recently started getting Cooking Light again and have been super impressed with the recipes! The Steak and Tomato Panzanella was my fav!!
