I would like to start with a huge thank you for all of your organization/living clutter free tips. I am having an issue where my comment replies aren’t showing up right now but I appreciate every single suggestion and I’m definitely going to heed the advice to take it one piece at a time. I will definitely keep you updated on my progress. With pictures to hold me accountable! ๐
I’m currently planted on the couch and unable to move. Tuesdays do me in every time. I taught four yoga classes, BodyPump and squeezed in my own personal practice to complete day 8 of the 62 day yoga challenge. BodyPump was my last class of the day and the mic was broken. I channeled my past life as a cheerleader and got super loud but I was officially sick of talking by the end of class.
Some of today’s eats…
The best sandwich ever. Peanut butter, banana and honey on Great Harvest Dakota.
Greek yogurt snack.
I had a quick break between classes so I popped into Starbucks to write out a new sequence for my 4:20 at Y2 and caffeinate. I had an Awake tea with soy milk. The 4:20 was my last yoga class of the day and they were so amazing. The yogis at Y2 have really stepped it up since the start of the 62 Day Challenge and classes are packed. So grateful for their energy and enthusiasm!
Dinner was leftover lasagna from Sunday night. I never blogged Sunday night’s dinner but I threw together a lasagna and it was delicious. I cannot even remember the last time I made lasagna…or ate it. I’m so glad I did make it because we have a ton of leftovers and it’s making my cooking duties very easy this week! I’m usually not a big leftover fan but some foods are just better leftover…like lasagna! And tonight I had zero desire to cook after a long day so it was very nice to have dinner taken care of.

I am a huge leftover fan. And I agree that some foods are just better as leftovers -lasagna, chili, etc!

Love them! Makes the week “less stressful” and some nights I will challenge myself to tweak the leftovers a little to make it a new meal! Good luck organizing ๐ I am a list maker… keep a small notebook with you and when you think of something or see something that needs attention just jot it down. That is the best thing for me to do… then you can just choose one and go from there. You WILL get it done… don’t get overwhelmed ๐
PB and banana sammiches are the best! I’ve also never made lasagna before, but I bought everything today and it’ll be dinner tomorrow! love lasagna ๐
Hey! I’ve been reading your blog for a few weeks and it’s great! I personally lovvveee leftovers. I make extra just so that we will have leftovers. They make lunches so much easier for us. ๐
I love leftovers! But then again im one of those people who eats the same thing pretty much everyday.
I’m on the fence on leftovers, but John loves them…he always manages to eat any piece of leftovers that are in the fridge!
Love leftovers! But to me leftovers are only good for like 2 days, then I’m sick of them. But it saves us money and makes cooking easier. When you’re only feeding two it makes sense to cook more so it lasts longer.
I have been pretty much surviving on leftovers this week because I have been too lazy to pack a real lunch!
It’s actually been working well though!

Love! Especially since my husband and I have a 14 mo old crawling around. Some nights we barely have time to eat so leftovers make our dinner planning much more simple. And simple is GOOOOD!

I love leftovers! They’re usually better the day after anyway. The hubs isn’t too keen on them though but that’s b/c he was raised in a house where leftovers were usually tossed. It’s easy, saves money, and you can usually find a way to make a new dish out of them.
Also, the Chobani made me smile. Because of you, I have a Greek yogurt obsession. Especially Chobani’s pineapple!
So totally pro-leftovers. I’m not someone who craves tons of variety though. I could eat the same thing day after day very happily, so long as it was yummy!
I love (most) leftovers. Less dishes, no cooking, and melded flavors. Cant’ complain. I also love GH Bread. It never lets me down – I just wish my local one was open on Sundays.
I love leftovers! I always try to make a ton of extra food at dinner so we can take it for lunch the next day
Just found your blog and I really enjoy it! PB and banana sandwiches with a drizzle of honey have always been a staple in my diet too:) I’m training for my first half marathon and all of your posts on running are super helpful and inspiring. Question about the PB/banana/honey sandwich: How long would do you think they would stay in the fridge? I’d like to bring one for lunch but it would be about 5 hours between making it and eating it, so I’m not sure if that would work… Thanks!
Sometimes I love leftovers…and something they skeeve me out. It’s really strange and there is no rhyme or reason!
i LOVE leftovers! Since I bring lunch to work everyday, I usually just have leftovers if i’m not making a salad. it makes life so much easier, and allows me to “cook for one” without having to make single portions every night.
Not the biggest fan of leftovers, don’t know why, I’ve never been since I was a little girl. Leftovers do make things easier for sure, especially when you have as busy as a scheudule as you do!!
BUT I am a BIG fan of that PB Sandwich!!! Looks perfectly amazingggggg! I want every single bite of that ๐
