Merry Christmas Eve!
You didn’t hear from me yesterday because it was an epic push to finish Christmas shopping after spending the morning/early afternoon training/teaching/in meetings/etc. By the time I made it home at 9 p.m., all I wanted to do was eat some sushi and pass out.
I did come across something super exciting while I was shopping…Lincoln Logs!!!! I used to love these things. There was a whole section of “throwback toys” at Target.
Here are a few recent eats. Sorry for all the iPhone pictures but my 32 gig memory card cracked in half so I haven’t been using my DSLR. Thank god I was able to salvage all 4,000 pictures off of it but I just bought a replacement while I was out shopping yesterday.
Smoothie with frozen banana, blueberries, strawberries, pumpkin puree, almond milk, cinnamon, plain greek yogurt, a date and peanut butter. Topped with carrot cake granola.
I have been craving eggs lately! This was my second egg breakfast in a week. Sourdough toast with butter and a perfect egg.
Loving this lunch right now. Mixed greens, maple turkey, avocado, sliced almonds, apple cinnamon goat cheese and a maple dijon balsamic vinaigrette. Trader Joe’s roasted red pepper tomato soup on the side.
Barbecue keta salmon with roasted brussels sprouts and mushrooms. I had never tried keta salmon before but they had it at Whole Foods. After some Googling I learned that it’s a leaner variety of salmon and has about 20 calories less per 3-ounce serving than sockeye salmon. It’s the second most abundant salmon variety in the Pacific Northwest. You can definitely tell it’s a bit leaner when you’re eating it because it’s a little drier but it still tasted great.
This was the best homemade dinner of the week. Panko-crusted baked eggplant parmesan topped with chicken sausage and marinara sauce. Roasted asparagus on the side.

Me and the girls are loading up and heading to Georgia for Christmas. Wish me luck with two dogs in a small car for four hours! 🙂
