Ahhh…I love Sunday night that feels like Saturday. It’s so nice to know I don’t have to be up at 5 a.m. Monday to teach BodyPump! (And not that I don’t love it, it’s just nice to have a morning off!)
We’ve done our best to make this long weekend count since we’re not traveling. We’ve crammed in a ton of errands and tomorrow we’re going to be hitting up the yard work again, sigh…
I have lots to catch you up on!
Lunch yesterday featured my first trip to Which Wich. It’s a really cool sandwich concept where you pick up a paper bag at the door and mark what you want on your sandwich. They have great vegetarian options so I went with hummus as my based on whole wheat and added lots of veggies. I was super impressed. Which Wich blows other sub chains out of the water…especially Subway. My sandwich was delicious!
Annnndddd then I spent all my money at Ikea. I know I’ve mentioned this in other posts but we’re making a big push to get our house organized and looking good (inside and out). I’ll share progress pictures if you guys are interested!
I passed on the opportunity to go see Something Borrowed for girl’s night in favor of staying in to cook and play with my Ikea purchases.
It felt so good to be in the kitchen. I roasted cauliflower and made Spiced Chipotle and Honey Chicken from Josie’s blog.
I really enjoy Josie’s blog, Pink Parsley. It’s one of the first places I turn when I’m looking for inspiration. I like Josie’s cooking style and I think we have really similar tastes. I pretty much want to make everything on her blog. 😛
After dinner Brandon convinced me that he needed dessert to fuel him through assembling our Ikea purchases. How could I say no to that plea?
Enter a giant chocolate chip cookie baked in a cast iron skillet. The edges were a little crisp and the inside was soft and gooey. Martha Stewart, I love you.
I was so excited for my first long run in preparation for my 15k in July. I was up at 6:45 and on the road by 7 a.m. I ran seven miles and it felt really, really good. It was my longest run since February!
I kept around an 8:50 pace and felt totally in the zone. I was dripping with sweat when I got home due to the humidity. Thank goodness for my Fuel Belt! All things considered, I can’t believe how easy this run felt. Given that I haven’t focused much on running lately, I was concerned with how I’d feel. My legs felt strong during the run and I’m not sore at all now. It seems all the cross training and minimal maintenance miles have helped me maintain my running fitness.
I quickly showered and made a green monster that I drank on the way to teach yoga. I taught a 90 minute hot class this morning (thus the reason for the early AM run).
Lunch after yoga was a peanut butter, banana and honey on Great Harvest Honey Whole Wheat.
We had a fun family cookout tonight but I’ll fill you in on that tomorrow. It’s getting late and reading in bed is calling my name!
I love 3day weekends! Sounds like you had a good mix of organization, exercise & relaxing. I had to stop to stare at the skillet cookie! Yum!

Also, I have a question for you. I have a stress fracture of my fibula from a combination of running, tennis, and volleyball. Have you had any injuries that have put you out of running commission and if so, how did you deal with it? It is so hard for me not to run in the summer 🙁

i’m sorry to hear about your stress fracture. injuries can be incredibly frustrating, especially those that completely sideline you from something. i have had injuries that have forced me to stop running for periods of time. during those times i focused on other things, like swimming and my yoga practice. one summer i was dealing with bursitis in my knee and started swimming. i fell completely in love with it! also, if it weren’t for injuries, i would have never discovered yoga.
instead of dwelling on not being able to run, think about all the other things that you can do and use this as an experience to become stronger in other areas. your body will heal and you’ll be back on the road before you know it.

alaina – you can use a normal 10 inch skillet too. it doesn’t have to be cast iron. just make sure that it’s not nonstick.

I had a chocolate chip cookie in a skillet out somewhere once and it was INSANELY good! Must try making one of those at home sometime! Congrats on your first long run in a while!
