I have been starving for the past few days. Insatiable hunger that has me waking up hungry, that makes my stomach growl for lunch by 10:30, that leaves me feeling ready for an afternoon snack just an hour after lunch and that requires a substantial dinner. This crazy hunger is nothing new…I experience it for a few days every month. I think it’s hormonal. If I actually kept track of these kinds of things, I’m sure I’d see a pattern. (Who has the time?)
So during these few days, I have to get creative with strategies to feed the hunger monster things that will keep it at bay. Today’s lunch was so delicious that I immediately had to share it with you.
When I opened the fridge an avocado spoke to me. High in monosaturated (good) fat, I knew it would offer some staying power. And then I saw the eggs and cheese…the rest was history.
I toasted a slice of Great Harvest Dakota Bread and then topped it with about one-third of a mashed avocado, spinach, an egg over medium and a slice of provolone. After a quick trip under the broiler, it came out ooey, gooey and perfect.
And of course the oatmeal chocolate chip cookie (I baked them last night) on the side was totally necessary. 😉

Mmmm delicious! Avocado and cheese alone is a win win combination, never thought of adding the egg- will have to try that!

I’ve been a bottomless pit today, too! If only I had an avocado… that looks so yummy!
i am battling the hunger monster too! especially at night. get out of my way cereal if you want to live to see another day! it is SO BAD! i think mine is hormonal too, or i am just a raging cereal fiend. maybe both. either way, i need to eat some good fats too and take care of it!
i know, i’m tempted to eat things like cereal too but know i need to eat the fats and proteins to really beat it. i just deal with it for a few days and then the crazy hunger passes.

My favorite lunch lately has been chicken mango tacos. Just finished my last bite as I read this. I usually try to include more fat, protein, and vegetables when I’m trying to beat the hunger monster. Your lunch looks like a good one! The only problem is that I’ve never learned how to make eggs any way except scrambled. Ha ha. Maybe it’s about time I learn. 🙂
oh, i have a fail-proof way of making eggs. perhaps i’ll do a short video tutorial!
That sandwich looks fantastic! I love melty cheese on most anything! Your hunger is probably hormonal like you said. Right before or during your cycle, your body burns up to 300 extra calories a day doing its womanly thing and you get extra hungry to compensate for it. At least that’s what I’ve been told by my mommy who’s a nurse. 🙂
that sounds like a very reasonable theory to me…so i’m going with it. i’ll pretty much go with any excuse to eat an extra 300 calories a day! 😉

Lately I’ve been loving spring rolls… I just chop up a bunch of vegetables and some tofu, wrap them up in rice paper, and make a simple peanut sauce with liquid aminos, peanut flour, lime juice, rice vinegar, and agave.

MMmmmm I love this lunch recipe! and so would my husband! Just remember avocados have monoUNsaturated fats…being unsaturated is what makes em good fats! 🙂
Ohh yum! Anything that involves avocado and cheese is a WIN in my book. Bonus points for toasted bread. Mmmm. I often get the hungries too and it can be frustrating because they seem to strike without warning and I feel like a bottomless pit, getting the urge to eat even just an hour after a full meal. But frustration aside, I take it to mean that my body just wants/ needs more food to fuel my active lifestyle and feed the hungry beast inside – I guess its not a bad problem to have. Usually my body craves more fats and is only satisfied when I give them to it – often in the form of nut butters, although chocolate pudding made with avocado gets the job done pretty well also 🙂
