Whew…the long weekend was nice but today has been crazy. It definitely felt like a Monday even though it wasn’t. I just sat down for the first time (it’s 10 p.m.) since I left work. This evening I taught BodyPump, went to the grocery, cooked, cleaned, made my breakfast for tomorrow and packed my bag (tomorrow is a yoga morning).
Breakfast this morning was a big bowl of apple cinnamon oatmeal.
Oats, Bob’s Red Mill 10-Grain Cereal, water, almond milk, diced apple, chia seeds, raisins and pear butter. Topped with Crofter’s and TJ’s almond butter (only about a tablespoon but it spread like crazy – yum!).
I tried to catch up on my Google Reader while I was eating breakfast but didn’t make much of a dent in it. I have 377 unread items and it is causing me great anxiety! I need to know what’s going on in the blogosphere.;)
I came home for lunch and whipped up a veggie sandwich.
Roasted red pepper hummus, spinach, sundried tomatoes, cucumbers, avocado and roasted red peppers on a whole wheat Arnold Sandwich Thin. Grapes and a few Kashi crackers on the side. I ate outside with a Runner’s World – such a nice break in the day.
My snack this afternoon was a Chobani Pineapple.
This flavor is easily my favorite and you must try it if you see it in the store. When I’m eating one, I feel the need to tell everyone around me about the greatness of this yogurt. My new co-worker got the speech today. Haha.
I taught BodyPump after work and it was a fun class. Big numbers today – I think everyone was atoning for the long weekend. I taught a really challenging release and my class pretty much hated me for making them do pushups at the end of the chest track and dips at the end of triceps. ๐
A vegetarian dinner was a must for dinner tonight.
I created a stir fry with tofu, broccoli, green peppers, onions, mushrooms, ginger and garlic. I made a sauce with vegetable broth, oyster sauce, teriyaki sauce, Siracha, rice wine vinegar, sugar and soy sauce. I tried to measure everything out so that I could share the recipe with you but ended up just throwing in a little of this and a little of that into the pan. I served mine over brown rice.
I was seriously craving ice cream tonight. I took a picture of my bowl but it didn’t save to my folder and I’m too tired to edit it again! (Lazy blogger!) It was pretty amazing – light neopolitan ice cream, caramel sauce and chocolate syrup in a waffle bowl.

I feel your love of Chobani Pineapple. I bought up every cup they had at Publix last night!
I totally agree about the Pineapple Chobani! Its the very best one! It makes me sad that they don’t carry at Costco though – they only carry the variety pack with strawberry, blueberry, and peach.
