Happy Memorial Day! I had grand plans of getting up at 7 this morning, blogging, going to yoga, working a bit and then pool partying for the rest of the day. Annnnddd then I slept until 9 a.m. which resulted in missing yoga. Now I’m getting a late start on the blog/work stuff and still want to fit in a run and cook something for the party. Honestly, I don’t care though. I get so sick of rushing around all the time. I’m just going with the pace of today. I’ll get as much done as I can/feel like and then I’m going to plant myself by the pool for the rest of the day…and not care about anything.
It’s been a couple days since I checked in so here’s a look at the weekend in photos.
Farmers market haul – look, peaches and tomatoes!
Salad – local lettuce, chick peas, toasted walnuts, local strawberries, goat cheese and dried cranberries with balsamic vinaigrette and sourdough toast on the side.
Sushi at Cowfish. The Two Time Roll – “thin slices of fresh cucumber rolled around yellowfin tuna, avocado, kani and asparagus. Topped with blackened tuna tossed in a spicy cream sauce, and finished with multi-colored tobiko. Served with ponzu sauce.” Yes, it was as good as it looks.
Drinks with co-workers and friends.
Brunch with a friend who’s visiting from California. She took my Sunday hot class and then we hit up Customshop for brunch. Prosciutto and manchego omelet with shaved asparagus.
Sunday evening cookout. Chips and guacamole. (Still working on those avocados.)
Burgers!
Just ate this delicious breakfast. Plain Greek yogurt, honey, granola, bananas, peaches, blueberries, strawberries and Justin’s Maple Almond Butter.
Going to knock out as much as work and as many miles possible, then it’s pool time!
Just for fun, this song came on my Pandora stream this morning (Ray Lamontagne radio) and brought a huge smile to my face. It always makes me a little homesick (in a good way) for my home state.

I get a similar roll wrapped in cucumber with crab, salmon, avocado and carrots and it’s my favorite. I love the play on sushi without the ricce and seaweed. Creative and healthy. That burger with the toasted bun has be putting a burger night on our menu for the week.
i like it too – it’s so nice not to have “rice belly” after sushi!

quick question : How have you been storing your avocados to keep them fresh? Also, when you cut one to use it, if you don’t use the whole thing how do you store unused cut avocado to keep it fresh?
Hillary, you can refrigerate avocadoes to make them last longer. They can last weeks longer this way than if you left them out on the counter. Once cut, store them in an air tight container drizzled or mashed with citrus if possible, and leave the avocado pit intact to help with browning. Still, once cut, avocadoes tend to not look too hot after 24 hours or so.
hillary – to reiterate what meaghan said, i store them in the fridge. also, when chiquita sent them to me they were packaged in plastic bags and they told me not to take them out until i was ready to use them. they’ve lasted weeks! crazy.
i just store my cut avocados in a plastic bag with the pit. i just cut off whatever has turned brown. no big deal!

I’ve never tried a sushi roll in a cucumber, sounds like something I need to try! The farmers market foods look delicious, I’m moving near a farmers market again and I am so excited to get some local fruits & veggies!!

Hey Jen, I enjoyed your video blog the other day. I know you mentioned some leg exercises for runners. Do you have any specific exercises you recommend for IT band pains? I’m always trying to work my hips but I still have the IT band issues. Wondering what you might recommend from a strength-training perspective.
from a flexibility/mobility perspective…keep up with the yoga! all the revolved poses stretch it bands a lot (revolved triangle & half moon especially). also, foam rolling and lacrosse balls for mobility.
from a strength standpoint, i would work on stability exercises to build up the ankle/knee/hip line. anything you do on a bosu – squats, lunges, single leg reach, etc. i’ll do a video with these exercises!
I had a similar omelet this weekend with my Mom! It was so good…eggs, prosciutto, asparagus, and Fontina cheese with delicious potatoes and seven grain toast. Heavenly! Glad you had a lovely weekend…um the young man next to you in that picture is gorgeous. 😉

I know what you mean when you say you always feel as if you are rushing around trying to get things done. Sometimes you need days where you sleep in and go with the flow! And that sushi with cucumber does look amazing 🙂
Sometimes you just have to go with the flow. I find that I do that now more days than not. I do try to stick to a general “to do” list everyday. As long as the important things gets done, everything in between is just sugar! I hope you enjoyed your Memorial Day weekend!
