Better late than never, right? Here’s the menu plan for this week. Please keep in mind that I’m only preparing meals Sunday-Wednesday this week because we’re flying to DC on Thursday for a long weekend!
Sunday
- Grilled ribeye (using the T-Rex method) topped with blue cheese
- Grilled zucchini, squash and mushrooms
- Roasted Spiced Sweet Potatoes (I added a bit of cinnamon to these)
Monday
- Vegan Black Bean Burgers (I’ve been dying to try Emily’s recipe!)
- Corn on the cob
- Salad
Tuesday
- Grilled Chicken Salad for him
- Black Bean burger salad for her
- French bread or corn bread
Wednesday
- Pasta with Vodka Sauce topped with spicy chicken Italian sausage (will sub a bit of half and half for the heavy cream)
- Salad
- Garlic bread for him (Brandon will not eat pasta without garlic bread!)
Thursday and Friday
- Out in Washington, DC!!!
