What a day. That’s the best way I can describe it right now. I was really wound up from the weekend last night and didn’t make it to bed until around midnight (way late for me). A short five hours later, my alarm went off to make it to the Y to teach BodyPump. I’ll admit that I was not on my game this morning. I was teaching a new release (BodyPump 76) and it was a bit of a struggle. I made it through but with errors that I usually do not make. I love the new stuff though – here’s hoping Thursday’s class goes a bit better!
The crazy thing is that my body feels pretty good. I’m not overly tired or sore today so that’s a nice surprise. While BodyPump was a bit of a mental challenge, it felt great physically.
I’m always starving after I strength train so I had a big bowl of apple cinnamon oatmeal for breakfast.
Work was soooo very busy today. My to-do list is already 20 items strong and it’s just the beginning of the week. I broke for lunch around noon. I felt bad about leaving with so much to do but I really like to get out of the office for a bit when I can to get some fresh air and a change of scenery. I rarely eat at my desk.
Hummus, mashed avocado (yay the avocado is back, it only took a whole week to ripen), spinach and cheese on Great Harvest Whole Grain Goodness (I have a loaf in the freezer in case you’re wondering why I’ve been eating it every day). Half of a pear and carrots on the side. I also had two mugs of green tea at work this afternoon but no snack (too busy).
I was hoping to get some cardio in after work today – I miss running. I ended up getting called into a meeting from 4:30-6 and then had a ton of emails to deal with when I got back to my desk. I stayed at work until after 7 and no running was going to take place then. I was hungry! This is why I’m a fan of morning workouts. You know that the craziness of the day won’t get in the way of your workout.
I had grand plans of going to the grocery tonight to stock up for the week but I passed on that and just made a pot of soup. I had leftover shredded chicken from last night’s pizza and decided to make chicken tortilla soup.
This soup took only 15 minutes to assemble and about 30 minutes to simmer and was awesome. It totally hit the spot after my long day AND it’s healthy…well until you keep reaching your hand into the chip bag to dip more chips in the soup. ๐
This will definitely be part of my lunch box tomorrow – I will be eating at my desk since I have a ton of meetings. Do you guys want the recipe? If so, I shall post it on Bakin’ and Eggs tomorrow. (Edited to add – It sounds like you want the recipe! Promise I will post it today!) I just can’t get over how easy it was with minimal work. The best kind of dinner after a long day!

I’m going to say yes to the soup recipe too even though i really hate to add to your to-do list right now! We have leftover beer-can chicken from the Big Green Egg that i think would be perfect for that. Hope your week gets less nutty starting today! Btw- our BP classes are going great – in fact i cant even get in them they are so packed ๐ but that’s a good thing! Thanks again for your inspiration ๐

Hi Jen – I live in Charlotte, and just recently found your blog! I just wanted to let you know that avocado should ripen faster if you toss it in a brown paper bag and put it in the refrigerator.

I’d love to see the recipe! I am a huge soup fan — and chicken tortilla soup is a fave of mine. There are so many different recipes out there, and I’m up to try a new version. Your avocado looks perfect on top and blue corn is the only way to go!

I love love love doing BodyPump — it makes me feel fantastic! But… I’m going to be moving to a rural town without BodyPump in a few months. Do you know of any workout videos that I could find that are similar? I don’t know if I can go back to regular weight training now… I’m spoiled!
