Did you survive Monday? I find that Monday sets the tone for my week so I always try to go into it with a positive attitude and think about all the good things I have to look forward to during the week.
My Monday started out wonderfully – I slept until 7:30 a.m.! I am not teaching 6 a.m. BodyPump in June. I switched class times with another instructor who has a conflict to cover her Tuesday evening class. I considered going to a 6:30 a.m. yoga class but decided eight hours of sleep were necessary. I was in bed at 1 a.m. and up at 6:30 Saturday and Sunday so my body was begging for a break.
Another thing that helped my Monday attitude was having a relaxing Sunday evening at home. Last night I cooked my favorite chicken enchilada recipe and Brandon and I watched No Strings Attached.
The enchiladas were awesome, as always. You must make this recipe. I love that the enchilada sauce is homemade, it makes the biggest difference in the taste.
No Strings Attached was just okay. It was entertaining and had some funny scenes (and I just love Natalie Portman) but there were some way cheesy lines and the storyline was very predictable.
Then I slept for eight hours and everything was right in my world again. 😀
Breakfast this morning was oatmeal with summer fruit.
Diced South Carolina peaches (my first peach of the season!), North Carolina blueberries and banana with oats, chia seeds, cinnamon, dash of salt, vanilla soy milk and water.
I came home for lunch and enjoyed another favorite summertime lunch (and by the way – I know summer doesn’t officially start until June 21 but it’s 90 degrees out…it’s summer).
A tomato sandwich with herb mayo. I love, love, LOVE tomato sandwiches. All I need is fresh, juicy tomatoes, mayo, salt and bread.
Another thing that comes with 90 degree weather is craving cold drinks in the afternoon at work instead of hot tea. I used to drink a Diet Coke almost every afternoon (my old office had a fridge full of them) but I gave up sodas about a year and a half ago. I will share the story on why another time but I had a fierce craving today.
I will still drink a coke every blue moon and I thought that I would have one today. Well, I took my dollar to the vending machine and was feeling just a little guilty as I put the money in. The machine spit it right back out. I tried again with the same results. I took that as a sign that I should listen to my inner guilt and went back to my desk and got a Yogi Green Tea Energy. Much better! 😛
After work I booked it to my second home the yoga studio to sub the 5:45 hot class. Class was fabulous…I’ve said this so many times already and you will hear it another million times but I simply love teaching. It makes me so happy.
And finally…so many of you commented on my blue dress from the wedding. Thank you!!!
Here are the details…Brandon and I were shopping for a Mother’s Day present in Virginia Highlands in Atlanta. We popped into a boutique and while I was picking out a gift for my mom, my sweet husband brought this dress to me and insisted that I try it on. We both loved it and I instantly had Anna’s wedding in mind as the perfect occasion to wear it. It was on a mega good sale! It’s Max & Cleo. I can’t find this style online but this one is similar.

You cannot beat a tomato sandwich for lunch with a GOOD tomato!! I’ve been having mine with hummus, olive tapanade & spinach. Summer has arrived in Texas too. I love starting the week with all my morning workouts & dinners planned, both of which make more time to relax in the evenings.

I’m a hardcore list maker, so I seriously look forward to checking things off my lists throughout the week. Another thing I look forward to is yoga. I’m new to the whole thing, but it seems to be the best thing that’s happened to me in a long time!

Well, I moved out of my house and am staying with friends, so that feels like a good start to the week. I also just had my first Kombucha ever… tell me: did you feel a touch off the first time? Is it something you have to get used to? I had no problem with the flavour (the smell didn’t thrill me), but now I feel like I consumed something that was a bit off… is this normal? 🙂
I would be interested to hear your story about giving up diet coke. I have been a real diet coke fiend since my teens – I loooove it. However recently I’ve been reading about aspartame, how bad it is and what it can do to your body and mind. It has been linked to causing anxiety, depression and panic problems – all of which I have been plagued with for several years now. I’m trying my hardest to cut artifical sweetners out of my diet but gosh…it is really hard to break the habit of a lifetime.
Thank you so much for class last night!! It was awesome. I left so happy, albeit exhausted! Thanks for the great reminders about how much control we have over our attitudes. I was taking total strength on Tuesday nights at Harris but now that I can make one of your Body Pump classes I might have to try it out. I used to have the same Diet Coke craving. I still love a cold can, but I typically drink seltzer now. I get the same fizz without all the crazy ingredients.
becky – seltzer and sparking water have become my go to’s! i drink them almost every day with a lemon or lime slice.
I love tomato sandwiches, they are such a great part of summer.

I’m a planner, so my week starts off on a positive note if I have my dinners and workouts planned for the week. It takes the guesswork out of my nights, and I feel much more relaxed.

agreed! i am a big fan of menu planning and i schedule my workouts at the beginning of each week. it makes me feel so much more organized!

Thanks for all the recipes. I made the overnight oats for the hubby and me last night. THEY ARE THE BEST!!! LOVE LOVE LOVE THEM! I look forward to taking your hot class soon but the doc says no hot yoga since I pulled hamstring in Dec and re-injured in March (both during hot classes!) Dont think I can wait much longer! i feel your pain on the hamstring. i have struggled with my hamstrings since last november. i try to just take it easy and stop when i feel any discomfort. i hope you feel better soon!

Today I came home from work and a box was in the mailbox. It was the size of a VHS tape (Remember those?) Inside my mom had shoved a Nine West sleeveless faux-wrap dress with a bit of shimmer to the fabric. There was a note “Saw this and thought of you. If it doesn’t fit, I kept the receipt.” It fit great! My mom knows me so well… And now that I know this dress packs so well, it’s coming with me to NYC next week!
