So the name of this post came as a result of me asking Brandon what I should title it…he loves monkeys and in his mind bananas = monkeys…there you have it! ๐
In the past I was never really in love with bananas. I thought they were just okay and they definitely weren’t a weekly staple at the store. I liked bananas in things (like sandwiches, smoothies, banana pudding, banana bread, etc.) but I hated eating them plain. They literally made me sick to my stomach.
Somehow over the past year there has been a miraculous transformation and I just can’t get enough of them. I buy a bunch of bananas every week at the store and I eat them all the time. I even love them plain now…especially with a smear of peanut butter as a pre-workout snack.
Yesterday’s eats were full of banana goodness starting with a fabulous new oatmeal combination for breakfast.
I had leftover coconut milk in the fridge and decided to add it to my banana oatmeal. It was a good decision! This mixture was so delicious.
Banana Coconut Oatmeal
1/4 cup Bob’s Red Mill Muesli
1/4 cup old fashioned rolled oats
Pinch salt
1/2 banana, sliced thinly
Dash of cinnamon
1-2 teaspoons chia seeds
1/2 cup light coconut milk
1/2 cup water
Slowly cooked on very low heat for about 20-30 minutes (until thick and creamy and banana is breaking down, stirring often) and topped with almond butter, shredded coconut and Crofter’s. You must try!!!
There was no question on what I wanted for lunch yesterday. After all the peanut butter talk, I had a MAJOR craving for a peanut butter, honey and banana sandwich.
Perfection.

I’m the same!! I used to think bananas were alright, but now I LOVE bananas. Especially topped with PB…or in banana bread…mmm ๐ And I am SO trying that sandwich combo!! I have PB+banana sandwiches all the time, but I’ve never put honey in it! Tomorrow methinks! ๐
I love bananas! Topped with peanut butter, sliced on a whole wheat english muffin with peanut butter and cinnamon or even just sliced in almond milk. So good!
I’ve actually gone the other way with bananas: I used to love them so much I ate up to four in a day, but now the only way I can stomach them is if they’re plain pre-race or blended into a smoothie that masks the taste. I tried one again on my blueberry protein oats recently and it made me gag!
Although your PB banana sandwich DOES look insanely good ๐

Jen – sorry this is off topic, but you mention avocados as sandwich ingredients quite a bit, and I was wondering if you include a whole avocado or just part? my sister, who is doing weight watchers, says avocados have a very high point cound. I love them and eat them alot this time of year when not much is available fresh.

I usually use about a quarter of an avocado on my sandwiches. I either cut it into thin slices or mash it up and use it as a spread.
They are high in fat but it’s the good kind!
Definitely just had a peanut butter banana honey and cinnamon sandwich!! To die for!

Do you ever eat oat bran, instead of oats? I have been trying to more closely follow a metabolic eating plan (meataboliceffect.com) and switched from rolled oats to oat bran. Your ideas of adding nut butters, chia and crofters have definitely made it better!
I have never tried oat bran but I would love to! Do you like it?
