My strawberries from last week were on their last leg so I decided to make some mini Strawberry Muffins before work this morning (I know, I’m weird. I like to bake before work.) I made a few changes to my original recipe but they still turned out nicely.
I crumbled one of the mini muffins over my Apple Cinnamon Oats. I know it sounds strange but crumbled muffins are a super tasty oatmeal topping. Since I was topping the oatmeal with the muffin, I reduced the amount of oats I used from 1/2 cup to 1/3 cup.
As expected, the tenant lunch at work today was less than stellar. Moe’s was catering a taco bar but there were no vegetarian options. Since I baked muffins this morning I ran out of time to make a back up lunch (also our pantry was so empty – we didn’t even have bread so I don’t know what I would have made). I had to make do with the Moe’s lunch.
I had one taco with rice, black beans, shredded lettuce, pico and a dollop of guacamole. About four chips and bottled water on the side. This did NOT hold me over this afternoon. In the middle of a big marketing meeting around 3:30 I was starving and got a terrible headache. The second I got out of the meeting I made a beeline for my car. I remembered that I had a granola bar stashed in there. It was a lifesaver today. I must restock my desk snacks for these type of emergencies. Sudden hunger doesn’t happen to me often but it’s miserable when it does.
I was still recovering from my headache when I got home from work and thought I would skip my run today. I decided just to go to the grocery and come home and start dinner. When I arrived home from the grocery I was feeling reenergized and decided to head out on my run as planned. Sullie and I knocked out a quick and enjoyable 3 miles. She’s a great running partner! 🙂
Cristen brought some mint from her garden when she visited this weekend and I wanted to use it in tonight’s dinner. I found this recipe for Shrimp with Basil and Mint Pesto from Giada and thought it sounded great. I’ll be blogging about it on Bakin’ and Eggs in the coming weeks.
I was very pleased with how this turned out. I served the shrimp with whole wheat couscous with onions, garlic, tomatoes and feta, roasted squash and zucchini and whole wheat baguette. A glass of white wine on the side that was leftover from weekend entertaining. Looking forward to leftovers for lunch tomorrow!
We’re watching Criminal Minds (I’m such a nerd, I LOVE this show) and then heading to bed. Hope you all had a happy hump day!
