Hi! This week is totally nuts but really amazing at the same time.
As much as I hoped it was allergies, I’m pretty certain I have a cold. The worst part is that it has been going since Friday and presents itself with different symptoms every day ranging from a stuffy nose to nausea to coughing but luckily it’s not a knock you out kind of cold and I’ve been able to work through it. I am really a-okay. I hate to complain about being sick. I feel grateful that I can still do my day-to-day stuff for the most part. I’ve skipped a few workouts and cancelled a few clients in favor of rest but nothing crazy.
On a work and personal front, I feel really challenged and connected. I am so grateful for abundant work opportunities (that I’m excited about) right now. I have also had several meetings with other women this week that have left me in total girl power mode. I’m forming partnerships, creating new relationships, planning workshops, etc. It’s so good!
A few pictures of what my week has looked like so far…
Green LUMI juice + black coffee + workshop planning with my BFF = the best start to the day.
Zoey had a session with her trainer today and we worked on not jumping on the counter (girl loves to counter surf!), here command, stays and heal/walking on the leash. She’s doing so well!
On Tuesday night I had the best girl’s group ever. One of my friends is launching a new website and had a few ladies over to bounce ideas off of and give feedback. In return, she cooked us the best food ever!
This butternut squash and caramelized onion bruschchetta was the best thing ever!
And these mini-falafels were incredible! We wrapped up the evening with homemade peanut butter cookies, mint chocolate chip cupcakes and a whole lot of talk about women in business, asking for what you want and being recognized for the work you do. I had never met half the women in attendance but I’m fairly certain we’ll now be lifelong friends. It was a good night.
And here at home, this week I have been OBSESSED with huge pans of roasted veggies. Bertolli sent me their new line of olive oil sprays to test out and I have been using them non-stop since receiving them. Instead of just roasting one or two things I have been combining all of my weekly shopping purchases. My favorite combo has been carrots, parsnips, brussels sprouts, turnips and sweet potatoes. Roast at 400 for 30-40 minutes, shaking the pan/stirring a few times while it’s cooking, and then enjoy! Tip…it’s even more delicious with a sprinkle of cheese during the end of cooking. (What isn’t better with melted cheese?)
Time to shut down (the computer and my body).
What is your favorite roasted veggie combo?
Roasting veggies are the bomb! Glad you had a lovely week!
Roasted brussel sprouts are at the top of my list 🙂 Hope you feel 100% soon!
I’ve been absolutely obsessed with roasted rutabaga for the last 6 months.
It’s amazing! I also love roasted sweet potato and brussels, and I’ve just recently tried roasting my own eggplant.
Veggies ftw! Hope you feel better soon!
I love roasted brussel sprouts. Hope you feel better and love feeling excited and empowered by work!!!YAY!!!
roasting veggies is my go to dinner. i just serve them over brown rice or quinoa with some sort of tahini dressing and a protein. i havent seen those olive oil sprays before!
I love roasted veggies and my favorite is asparagus, amazing. I roast it at 425 for 20-25 minutes. I sprinkle on a little olive oil and some tastefully simple garlic garlic or onion onion. It gets a little crunchy and I can literally eat it every day and so can my family. The problem is that it’s so expensive! Right now where I live it’s 3.98 a small bunch and I need four bunches.
Jen, I have a question. I have been crossfitting for three weeks now. I know to be patient but it’s hard. Anyways, I bought your book and I’m hoping you can tell me which intermediate sample workout will help me improve in cross fit. I can do the intermediate workouts, I have done a couple rounds of p90x, but unfortunately, I let myself go little. And I know cross fit takes time and I will get there but I would like to help myself get there! Ha. And I feel that plank fitness can help me get there. Core strength is very important. It certainly can’t hurt!
Those sprays look so good! I’d love to try them.
Connecting with strong women is a great way to feel even more empowered! Love it!
I LOVE all roasted veggies!!! Brussels, broccoli, carrots… I can’t choose a favorite.
