This post is going to be a little bit of this, little bit of that.
SOYJOY Giveaway Winner
Comment #157 from Ashley. I promise that the winning comment number was randomly generated and I did not play favorites based on peanut butter dipping!
Frog-dog
Half dog, half frog, 100% cute.
Pumpkin
First fall bowl of pumpkin banana oatmeal. Sullie is excited to have a can of pumpkin open because I mix some in with her food!
Grilled Cheese & Tomato Soup
Comfort on a plate and in a bowl. Jazzed the grilled cheese up a bit with mozz, colby-jack, tofu, spinach and avocado so it was more panini than grilled cheese, I guess. Still cheesy and good though! Many of you have asked my technique for panini making. It’s very complex and sophisticated. I melt butter in a cast iron skillet and then mash the sandwich down by placing a Le Cruset cast iron pot on top of the sandwich. Cook until golden brown, flip and repeat on other side (rebutter the skillet first, of course!).
I just did a CrossFit workout.
I put on my running clothes this morning and planned on running after my morning training client. Then I got busy. So I thought I would run on my lunch break…and cleaned the house instead. I ran out of time to get a run in before working the evening shift at the new gym and I was kind of grumpy about it because it’s such a beautiful day here. I was sitting at the front desk and one minute before they started the WOD, I jumped in and did it because I had to move my body. WOD was quick and a good burn.
“Hell”en
3 Rounds for Time
– 12 chest to bar pullups
– 400 meter run
– 24 kettlebell swings
I finished in 13:15. I kipped half the pullups and used a band for the others. I used a 35-pound kettlebell for the swings. I feel all better now!
More Quinoa Bowls
I made a big batch of quinoa and lentils at the beginning of the week. I’ve been using it as a side dish and in bowls…one of my favorite lunches! Today I layered spinach, quinoa and lentils, tofu, avocado, goat cheese, sundried tomatoes and kalamata olives. I topped it with Greek yogurt and hummus and added some chips on the side for scooping. Then I ate a ton of chocolate covered raisins while I picked up around the house. I am still working on my giant container of them.

love the frog dog!! So cute 🙂
JEN! Holy cow girl, I have been so bad at keeping up with friends’ blogs!!! That pic of you – wow your body is looking amazing! Looks like you’ve put on some muscle? Those arms!!! GO GIRL!!! Happy fall is here and that you’re sharing all your yummy meal ideas. Been doing a similar “bowl” idea for meals (I dip chips in mine too!)…thinking the lentils and quinoa are a good add:)
The boy is on the hunt for Charlotte jobs…we may be neighbors soon. 🙂
I am dying to know your pumpkin oatmeal recipe – Oatmeal is a staple for me and I love the pumpkin aspect of “FALL” so how do you incorporate it into the oatmeal? Please share ! 🙂
Great job on Helen! She was my first Rx named WOD, so she’s one of my favorites, even if I do dread her 400s!
So that quinoa bowl looks delicious… Quinoa bowl for breakfast? Yay? Nay?
Pumpkin oatmeal has been on my mind all day, can’t wait to make it for breakfast tomorrow.
When you say you finished the WOD in 13 minutes, do you go at max speed and just do it once figuring the calorie burn is that intense?
Love your complicated grilled cheese technique – going to have to try that next time because your sandwich looks amazing! Now I am wishing I could have grilled cheese and tomato soup for lunch!
haha…it’s a very scientific grilled cheese method! 😉
I have been threatening to break out my can of pumpkin since I purchased it last weekend. Your oats just solidified the need to get going on it.
do it! it’s time! 🙂
