Well, I’m back in Charlotte after a whirlwind trip to Tennessee. Due to the winter storm, I made the call with the studio owners that I should drive home after we wrapped our training on Saturday evening. I left around 6:30 p.m. and took a longer route that took me around the snow and rain. I arrived in Charlotte around 10:30 p.m. It’s a good thing that I left early because Kingsport ended up getting eight inches last night and they’ve cancelled training today anyway!
We are missing most of the snow here in Charlotte (per usual and I am fine with that!) but we have a good bit of ice and freezing rain coming down…which is worse. Fingers crossed my power stays on. Dorie just texted that hers is out in the next neighborhood over and I just heard a big boom of a branch or tree falling somewhere close by. Yikes. Hoping everyone stays dry, warm and safe.
Some food from last week to share.
BREAKFAST
Two scrambled eggs and a sliced banana drizzled with peanut butter.
Overnight oats in an empty peanut butter jar. This was a mix of oats, chia seeds, plain greek yogurt, egg nog, raisins and banana. Topped with cranberry sauce. I made a batch of cranberry sauce last week just to have for sandwiches, oatmeal, yogurt and whatever else I can find to put it on!
Two eggs scrambled in butter, a slice of my pumpkin apple bread from the freezer and fruit.
LUNCH
I made a big pot of curry cauliflower lentil soup last week and ate it for lunch with cheese toast a few days.
I am still on a big PBJ kick right now!
DINNER
Half of a Mediterranean frozen pizza from Whole Foods and an arugula side salad.
The curry cauliflower lentil soup with buttered sourdough toast. FYI, I used this recipe. It was okay but I won’t make it again.
My cranberry chili turkey meatballs over sweet potato cauliflower rice topped with honey goat cheese, spicy aioli and avocado.
The other half of my frozen pizza with a spinach salad.
ETC
I didn’t take any ETC photos last week but you know it was in there. I ate a piece of pumpkin carrot cake defrosted from the freezer, a peanut butter cookie from the freezer and ice cream.
Speaking of ETC, I stopped at the grocery store on my way in last night to get some eggs…with the intention of baking something today. Let me know if you’ve baked anything super yummy lately. I’d love to try a new recipe…and something holiday-ish would be fun!

Jen, happy to hear that you made it home safely. The food from this last week looks very appatizing. I don’t do a lot of cooking but I really would enjoy a recipe for some kind of oatmeal with berry cookies. Love oats!
I am also a big fan of oats! I love making oatmeal cookies and also homemade granola!

Dave’s Killer Bread Good Seed is my current favorite. I also bought a Whole Foods brand multi-seed a couple of weeks ago.
Peanut butter and jelly is such a go-to for me right now. Ha it is a pregnancy craving that carried over! Glad you got home safe!

It was okay but just not as flavorful as I’d hoped given everything that went into it!
Random, but I was really annoyed by a labor intensive curry soup recently. My brother told me that you can’t taste the curry unless you add enough salt. It really brings out the curry flavor! I was shocked how the flavors in the soup came out after adding more salt. Maybe it will save your soup…

I recently made white chocolate chai snickerdoodles (recipe from Sally’s Baking Addiction) and they were SO good!
