All the food for you today! I have quite the round up of recent eats and I think you’ll especially love some of the dinner ideas here. One thing I’ve been eating a ton of lately is eggs! Mostly in scrambled form with salted butter and cottage cheese. I’ve been getting eggs from a neighbor and they are next level fresh and tasty.

BREAKFAST
Cottage cheese scrambled eggs, honey wheat toast with salted butter and sliced strawberries and bananas. Coffee of course.
Similar to the above but swap half a Dave’s Killer Bagel with butter and cream cheese for the toast.
Overnight oats at the gym between training clients. This and Perfect Bars are my favorite on-the-go breakfasts. This was a mix of oats, chia seeds, chopped bananas, chopped strawberries, dried cranberries, cinnamon, plain greek yogurt, almond milk and honey. On top was almond butter and blueberry preserves.
Dave’s Killer Boomin’ Berry Bagel with butter and cream cheese and a Nespresso. I’ve had a Nespresso machine for years and years and years but I don’t use it a ton because I love a pot of fresh coffee from my Cuisinart Grind and Brew. Recently, I discovered that you can get Starbucks Nespresso pods at Target – and they are so good! Starbucks coffee is not my favorite but these pods are really smooth and tasty!
More eggs, fruit and black coffee.
LUNCH
Let’s start with the simplest lunch of them all. I have been on a PBJ kick these last few weeks and this lunch has been on repeat (mostly sub Cheez-Its for the Goldfish but I was out this day). I’m also on a Coke Zero kick. I’m not much of a soda person but I do love a cold Coke Zero from a can.
Freshly baked sourdough day is always a sandwich day. The bread is so fresh and soft. This was sourdough, mayo, avocado, turkey, muenster cheese and mayomust sauce.
Turkey wrap made from a multigrain with flax flatbread that I found at Aldi. On the inside was mayo, avocado, turkey, muenster and arugula. I whipped up a little honey mustard sauce to dip it in using mayo, plain greek yogurt, dijon mustard, honey and water.
A little mid-afternoon snack plate with crackers, mini pickles, brie and apples.
Arugula tossed in balsamic, olive oil and sea salt and toped with a 90-second seven-grain mix from Aldi that’s easy and good, chopped apples, dried cranberries, toasted pecans, avocado, feta and deli turkey. This was a great combo!
DINNER
I roasted broccoli and a frozen roasted veggie blend from Aldi with beets, butternut squash, peppers and red onion. I can’t find a link to it anywhere but it was good! Served the roasted veggies over couscous with baked salmon, tzatziki, hummus and a lemon wedge. This was a delicious dinner!
Similar bowl to the above but swap chicken sausage for the salmon, lose the tzatziki and add shredded gouda and hot sauce.
Leftover salmon over a frozen Bird’s Eye quinoa and spinach power blend. I won’t say that I loved the power blend and am adding it to my list to buy again ASAP but it wasn’t bad for a dinner that was ready in under five minutes.
The shepherd’s pie with mashed cauliflower topping that’s on my blog. I used ground beef this time around. Salad on the side with romaine, tomatoes, cucumbers and ranch.
Salad with mixed greens, arugula, feta, tomatoes, cucumbers, the Aldi seven grains blend, avocado, deli turkey, kalamata olives and a greek dressing.
You should definitely recreate this one! Black beans and rice (I used these ready to eat baja black beans and will buy again!) topped with diced cherry tomatoes, shredded cheese, avocado, cilantro, plain greek yogurt, Trader Joe’s pepita salsa, hot sauce and a baked Mighty Spark chicken patty.
A similar take on the above dinner but without the chicken burger and without the natural light 🙂
Same chicken patty from the black bean bowl but this one was rice, roasted brussels, roasted mushrooms, hummus and tzatziki.
Trader Joe’s frozen riced cauliflower stir fry with shrimp and a scrambled egg added for protein. I’ve been buying this frozen stir fry for many years now (7-8?) and it’s an easy 10 minute dinner when you add a quick protein like eggs, shrimp, ground chicken, etc. I finish it with coconut aminos or soy sauce and sriracha. And I usually eat the whole bag!
This has been my favorite dinner salad combination for going on six months now! Chopped romaine, carrots, tomatoes, avocado, Trader Joe’s gluten-free chicken nuggets tossed in buffalo sauce after they come out of the air fryer and ranch dressing. Yum, yum and yum!
Same chicken nuggets over a Taylor Farms southwest chopped salad kit to which I also added tomatoes and avocado.
And lastly, eggs + sourdough toast has been a go-to dinner for me lately when I’m not feeling like cooking.
