Tomorrow is Friday and I have the weekend off of yoga teacher training. Brandon and I have no plans so I am looking forward to my first relaxing weekend at home in a month! Happiness…

It took every ounce of motivation that I had to get up at 5:15 a.m. and go to ashtanga this morning. It was totally worth it. I had a beautiful practice that left me with the warm fuzzy “I love yoga and am so grateful for my practice” feeling. I know, I know…such a yoga nerd.
Breakfast was apple cinnamon oatmeal at my desk and I came home for lunch.
Trader Joe’s veggie burger with mashed avocado, spinach, sprouts and cheddar on Great Harvest Honey Whole Wheat. Carrots, grapes and strawberries on the side.
I was pretty hungry all day today. I’m not really sure why but since I was teaching BodyPump tonight, I made sure to get a good snack in.
I had Liberte goat milk yogurt for the first time and it was really good. So creamy and not too sweet.
I topped it with a little bit of granola and almonds. I will definitely be purchasing this yogurt again.
I taught BodyPump after work and we had a full house – 40 hard working, fun members! There was tons of energy in the room. I love teaching group exercise!
Brandon requested Chicken Chili for dinner tonight. He said he really wanted to get in one last chili night before Spring is here in full force. I have a very strict rule about not making “winter” foods when the weather is warm! ๐

It was a delicious dinner but I am really looking forward to warm weather foods, grilling and eating outside. I’m ready to wrap up Winter 2011.
So…let’s get to the fun part! I posted earlier that I participated Katie’s online bake sale today to help her raise funds for a service trip to Nicaragua. The bake sale is over and was a huge success! I am going to be baking Peanut Butter Chocolate Chip Bars this weekend for the winner and while I’m in the kitchen I’m going to bake an extra batch for a Peanut Butter Runner reader!

I love to make homemade granolas. Since I lack all forms of portion control, I usually eat enough to count it as dessert. ๐
I want to learn how to make crazy cakes with multiple layers and lots of chocolate! No boxed cakes…real cakes!! Its fun to make, decorate, and eat ๐

My favorite dessert is cored, roasted red apples topped with peanut butter, walnuts & unsweetened coconut!
sounds like a delicious and healthy dessert option. i love baked apples too! my grandmother used to make them with red hots when we were younger! so fun.
One thing I love to make are Peanut Butter Blossom Cookies. They are classic and so yummy. Its a kid friendly recipe so my 4 year old is able to help me make them… and eat them.

Love, love, love to make homemade banana pudding with ‘nilla wafers. Reminds me of being younger when my mom would make it whenever I had a serious craving for it!
Kelly – your comment made me smile because the dessert that I always request my mom to make for me is banana pudding. She makes it with homemade pudding and merangue and it’s so good. It’s an old recipe from Southern Living.
oh and now I have a serious banana pudding craving! ๐
Even though it’s a Christmas time dish in our house, I love making charlotte russe with my mom. I love any type of pudding/custard dessert. It’s the best!
Those PB bars look amazing! I love trying any new cookie recipe, my current favorite is dark chocolate-coconut oatmeal raisin cookies!
One of my favorites is S’Mores bars – always a hit. Also chocolate chip cookie sandwiches with fun colors of icing in the middle, a college crowd pleaser and great gift for showers/parties/birthdays. Have a good weekend!

Our family LOVES my gingersnap cookies….like you, I try to NOT make them in the warmer months and they’re extra appreciated when fall/winter rolls around.
My favorite thing to bake are called “killer” brownies- they are chocolate, caramel, and all that really good stuff! YUm!

I love making my mom’s cream cheese brownies with chocolate frosting! They are unbelievable!!!
Your baked goods always look so amazing! When I bake, I usually make cupcakes or cookies. I recently tested out a friends family recipe for carrot cake cupcakes and it was amazing! I saved that recipe and plan to use it to wow my friends, family, and co-workers at any upcoming gatherings.
After dinner I like to make single size portions of quick desserts! (aka, I cannot be trusted).
Usually this involves the vita mix, and I make one (..or two) “raw ball” cookies.
My easy peanut butter cookies are a big hit with my family. Only three ingredients and they are SO delicious! All you need is 1 cup of peanut butter, 1 egg and 1 cup of sugar ( I use raw sugar and it gives the cookies a little extra crunch!)

Off subject but I thought I would ask since you are experienced in the yoga department. I’m a busy mom of 4 and I workout at home with dvds and other various workouts that can be done in doors. I consider myself healthy and physically fit. I have purchased a few yoga dvds because I want to incorporate it into my workout routine but have been disappointed with all the dvds I purchased. They are too short and not very challenging but are great for a good stretch, that’s about it. Do you have any yoga dvds that you would recommend? You inspired me to get into yoga, thank you!!!

Oatmeal Cherry White Chocolate Cookies…they sound aggressive, but they are delicious. I found them on Joy the Baker’s blog a few months ago and have made them once or twice every two weeks since.

I am a sucker for Tiramisu–BUT this past Thanksgiving I found a recipe for a no bake pumpkin pie (Joy the Bakers blog) and fell in LOVE! It wasn’t too heavy or overwhelming, instead it was super refreshing. I made it three times after Thanksgiving because I was so in love. Not only is it the best tasting dessert ever, it is super easy to make. ๐ Unfortunately, I am studying abroad so if I were to win I wouldn’t get to try your amazing dessert but I would have them sent to my bf because I know he would love them!

My favorite dessert I’ve ever made is a recipe from Giada DiLaurentiis… it’s a raspberry marscapone tiramisu. Slightly labor intensive but oh so worth it, with grand marnier whipped into the marscapone… bliss!

One thing I’ve been wanting to make recently is homemade Samoas….we’ve got a few boxes in our freezer but I’ve been staying away since they’re full of such gross ingredients! I’ve also been trying to brainstorm ways of using the huge jar or Dulce de Leche I brought hoome from Argentina this summer ๐

I have a recipe from Vegetarian Times for a dense, rich, vegan chocolate espresso cake with a chocolate ganache frosting. It’s made in an 8″ round pan and cooks up to about 2″ high in the center, so it’s a nice size to snack on all week! I often add ground almonds to it, and it gives it a nice texture and flavor.

My favorite dessert to make is banana pudding! I have always used my grandmothers recipe, but recently started making some healthy substitions, and am pleased out how delicious it still turns out.
I love to make Chocolate Pot de Creme! They’re soooo rich but you serve them in really small portions so its the perfect dessert ๐ and its fun because everyone gets their own little cup of delishiousness

My favorite dessert — Trillist Bars. I’m certain there is a ‘real’ name for them out there, but that’s the name my husband has given them in our house and it is going to stick.
2 C oatmeal
1 C brown sugar
ยฝ C coconut
ยฝ tsp salt
1 tsp soda
1 ยฝ C flour
1 C melted butter
Mix all together and Save ยฝ C of mixture
Press into pan
1 can sweetened condensed milk
ยฝ c pb
Spread over bars
Sprinkle on top
3/4 C Reece’s pieces
3/4C chocolate chips
sprinkle over bars
Bake @ 350 for 20-30 min
SO unhealthy – SO delicious ๐

I love baking something new. It’s a fun thing to expand your comfort zone and with baking, it’s pretty easy to get something that tastes good! (Sugar, chocolate, butter, etc. all aid the cause).
