Hola! I’m en route to Kiawah Island in South Carolina where I will spend the next 5 days at a Young President’s Organization conference. More details on that later but I’m so excited for the opportunity to attend this event. It’s going to be a once in a lifetime experience!
First, let me give a big thanks to Verizon for the mobile hotspot. Did you know that for $20 a month you can turn your phone into a modem and use it to connect to the internet anywhere? It’s pretty nice for long road trips!
Let me catch you up on what’s been going on the last few days with food and workouts.
I made a delicious dinner on Monday night! I picked up some spicy pimento cheese from a local vendor a couple of weeks ago and have been dreaming of pimento cheese stuffed chicken ever since. I pounded out the breasts, seasoned them heavily with salt and pepper, dredged them in flour and then spread the pimento cheese on one side and folded the breast in half. I browned them in the skillet with olive oil and then finished them in the oven at 350. Unfortunately, I didn’t have any kitchen twine to tie up the stuffed breasts so the cheese kind of oozed out everywhere but it ended up being a good thing because I spooned it over the chicken.
Served with green beans and sliced homegrown tomatoes that are the best I’ve had since last summer. Loved this dinner!
Lunch salad with spinach, mixed greens, tomatoes, olives, spicy almonds, feta, artichokes, cucumbers, pepperonici and salmon with balsamic.
My one and only WOD of the week and it was a great one! It was a decreasing rep scheme of front squats and weighted sit ups…a total of 84 of each! I was able to RX this workout in a little over 12 minutes. My legs are really feeling this! I have now promised my mom that I won’t lift for the next week to let my neck calm down so it’ll be all yoga and running for the rest of the week.
Pimento cheese…love it, leave it or never tried it? It’s one of my favorite southern foods!

You’ve had such vibrant eats in general :). My tomatoes and plums are starting to ripen as well, I’m so excited for some fresh, home grown treats!

I may have at one point in my life demolished a tub of pimento cheese while dipping tortilla chips in to it. Obssessed.
I tried pimento cheese once and was surprised that it was so mayonnaise-y. Is that how it’s supposed to be….or did I pick up a poor excuse for the real thing?? 🙂
Never tried it! I’m open to anything “cheese” so maybe one day…
Kiawah is one of my favorite places! Have you been before? If not, rent a bike and explore. The sanctuary is fabulous and fresh fields is a good place to grab a coffee and window shop. Have fun!
I LOVE pimento cheese! Southern style restaurants are my favorite because they always have a fantastic pimento cheese appetizer. I will definitely be trying this recipe soon!

Kiawah Island is the best!!! Ran the marathon at the golf resort last December and it was awesome!! Have a great time! 🙂
Grew up partial to my mom’s pimento cheese and never found one that I thought was good enough so we started making our own. Shred sharp cheddar from a block, red peppers, mayonnaise, white vinegar and sugar – simple but delicious…especially good with fresh ripe tomatoes. I can’t wait to try the chicken/PC recipe. I’m amazed at your energy to whip up such creative meals after working long, hard days. Keep up the good work!!
I love pimento! Just made some at home the other day. There’s a local vendor here that sells a spicy pepper jack pimento, and it is so good. Enjoy Kiawah!
After following your blog for nearly a year and a half I finally did my first Crossfit class yesterday – and I’m hooked – worried about getting ‘jacked’ and the big thighs from all the squats – any way to prevent this?
congrats on taking the plunge and trying crossfit! i would say that look isn’t “typical” but if you’re really worried about it then keep you squat weight a little lighter and make sure to counter all the lifting with lots of stretching/yoga to lengthen the muscles.
