A few weeks ago I asked if you guys preferred weekly recent eats posts or a bigger monthly recap. The vote was strongly in favor of weekly so I’ll keep going with every 7-10 days like I have for several years now. I’m just happy to hear that so many find these posts to be helpful. 🙂
Here’s a look at what I’ve been eating the past couple of weeks!
BREAKFAST
I’m loving bagels, scrambled eggs and fruit. I always buy the Dave’s Killer Bread bagels, Plain Awesome and Cinnamon Raisin Remix are my favorite flavors. Finn likes them a lot too. Related: I just listened to How I Built This with Dave Dahl and it was a great episode. I really, really respect companies that give a second chance to those with criminal backgrounds.
Smoothie bowls always. This combination of frozen banana, strawberry, mango, cauliflower rice, FAGE Total 5% plain, a medjool date, unsweetened vanilla almond milk, almond butter and Purely Elizabeth original granola was perfection.
As was this pretty purple combo of frozen cherry, blueberry, strawberry, cauliflower rice, FAGE Total 5% Plain, a medjool date, unsweetened vanilla almond milk, peanut butter and Purely Elizabeth chocolate peanut butter granola.
Rounding out breakfast with one more bagel, egg and fruit combo.
LUNCH
Mostly sandwiches. I did stray away from turkey for a PB+B. This combo is forever one of my faves. Especially made with salted natural PB and a little honey.
I did add some flair to my turkey sandwiches last week with pimento cheese instead of cheese slices. YUM! I know I keep sprinkling this in but I get asked a lot about what Finn is eating. He liked pimento cheese a lot.
DINNER
Salmon that I baked with a sauce that was a mix of maple syrup, lime juice, fish sauce and sriracha. Roasted sweet potatoes and roasted cauliflower on the side.
Rotisserie chicken with steamed brown rice cooked in coconut oil and a side salad.
Baked salmon cooked simply with salt, pepper and a spice rub. Roasted potatoes and sauteed shredded brussels with shallots and balsamic on the side.
Rice bowl with leftover sauteed shredded brussels, rotisserie chicken, avocado, feta, pistachios and a drizzle of ranch.
One more leftovers creation with spinach and arugula, quinoa, sauteed zucchini, avocado, pistachios and ranch. Some of you probably think this looks good and some probably think it looks a little weird. I just have to say that this combo really worked. Trust me on this one.
Veggie packed turkey meatloaf with a mashed sweet potato with butter and a side salad.
ETC
I needed a snack one day but I wanted something savory that was not chips or hummus. I ended up with this bowl of quinoa, tomato, avocado and cottage cheese. Hit the spot and kept me satiated until I could eat a late dinner.
I have been on a pie kick since my mom visited. She loves pie and we got a peach praline pie from The Fresh Market to enjoy for dessert. Well, I couldn’t stop thinking about this pie so I bought another one. Haha. I ate half of it and then froze individual slices to pop out of the freezer when I’m in the mood for dessert but don’t want to commit to a whole pie again.
Vanilla ice cream with chocolate syrup. A warm peanut butter chocolate chip cookie on the side.
That wraps up this edition of recent eats. My next one will include what I ate in Florida, which I know y’all always like to see since our family meals are pretty delish!

Everything looks wonderful as usual. Can’t wait to try the meatloaf. I am having some work done to my kitchen so I can’t cook right now! I love to make grilled cheese sandwiches with the pimento cheese. I use Dave’s killer thin slice bread and a pimento cheese the deli makes at our grocery story. It is amazing. They add dill to the pimento cheese and it is an excellent addition.
Ive been eating lots of overnight oats and chia pudding. I work at 630am so have to have it packed the night before. If its a weekend Ive been having avocado toast with some variation of a cooked egg.
Your eats always look so good! And I’m also always impressed by how much you cook for yourself. That was always a struggle for me. Fun fact: every year I help cater a Christmas party for Dave’s brother, one of the founders of Dave’s Killer Bread. Such generous and kind people!
Hi! I’ve just recently started reading your blog and I always like seeing your posts about what you’re eating. I’m just curious as to what diet or lifestyle you follow (if you follow a specific one)? It seems like you eat all the “forbidden” food groups, like “evil” dairy and not to mention pie and ice cream?! So I was just wondering! I find it refreshing that you seem to be so down to earth! 🙂
She eats the ‘I eat delicious food that I enjoy both mentally and physically. I don’t restrict and I eat to honor my body AND brain. Basically I eat what I like. Diet culture corrupted me!!!’
I love it and eat similarly. I love me some broccoli and blueberries and salmon and cottage cheese. But I also LOVE cool ranch Doritos and Cheetos and cake.
Fruit pies always! Especially love, apple, peach or cherry!
Jen, you are the Queen of Smoothie Bowls. I wish you could come over and make some for me. I don’t know why I feel like I have some kind of barrier to making a smoothie bowl.
Depends on the pie, but I do love pies. Peach is probably my favorite! Cherry, close second. Chocolate Chess pie in third. What is this chess? I’m a Northerner, but several of my southern friends have turned me into chess pies. Delicious.
I have recently started eating vegan so pies are kind of hard. Wah Wahhh.

Fruit any day! Huge fan of peach cobbler this time of year and apple crisp all winter, too. More easily repurposed for breakfast, too… 🙂 I am so glad you shared that info about Dave’s Killer Bread – I love their products, and am really excited to hear that I’m also supporting their great work, too. I am really loving their raisin toast with some almond butter lately – have you tried Big Spoon Roasters from Durham? They’re definitely a little pricier than Justin’s/store brand, but I like supporting a local business and a little always goes a long way with nut butters.
