One of the things that I love the very most about yoga is the community that it creates. On Sunday I had the honor of attending a baby shower for a fellow teacher. It was the biggest baby shower I’ve ever been to with over 50 teachers and students in attendance. It was a special day!

Butterscotch scones. PERFECTION! I had two!
I contributed two appetizers for the shower. The first was a feta dip that I served in individual cups with celery and carrot sticks and pita chips. I loved presenting these in individual servings instead of a big bowl of dip.
And these addictive and delicious little phyllo cups filled with pimento cheese and topped with pepper jelly.
They were a hit and I will definitely be serving them again and again for parties and showers. They were so easy and the presentation was cute. I think you could take them over the top with a sprinkle of bacon!

Description
A delicious bite-sized appetizer of phyllo cups filled with pimento cheese and topped with pepper jelly!
Ingredients
- 2 packages of mini phyllo shells (I used the Athens brand that come 15 to a pack)
- 1 1/2 cups pimento cheese (homemade or store bought)
- 1/2 cup pepper jelly
Instructions
- Preheat oven to 350 degrees.
- Remove shells from freezer and fill with pimento cheese.
- Bake for 10 minutes and then remove from oven and top with a little dollop of pepper jelly.
- Serve warm or at room temp.

If my non-Southern readers haven’t experienced pimento cheese…you are missing out! Please give it a try. It’s one of my favorite things that my grandmother makes for me. It’s good on crackers or in a sandwich.
Pimento cheese…love, not so much or never tried?
My mom loves pimento cheese, and I grew up watching her eat it, but I never tried it. Also, LOVE Trader Joe’s pepper jelly – I use it as a base for avocado toast, and it’s heavenly.
I love pimento cheese – my dad and I used to always have pimento cheese when I was growing up. So delicious!!

I completely agree – yoga communities are the best communities 😉 It’s amazing the friendships and “yoga family” that is created at a studio. One of the best parts of being a teacher!

Mmm pimento cheese good (said like Cookie Monster). I’m new to it and was definitely missing out. I got a recipe from Kath (Kath Eats Real Food) and have been using that and it is so, so good.
Obsessed w/ pimento cheese! And I am dying to make these. Just have that fear of eating more than I share. 🙂

Just wanted you to know, I made the pimento cheese stuffed phyllo cups for my sister-in-law’s baby shower and everyone loved them!!! I served these at a party with ulra-picky people,( and kids) and when they finally got over the name of “pepper jelly” on it, they tried it, and talked the rest of the family into trying it, and they did, and they ALL wanted to know the recipe! I am making it again today, for a new crowd of picky friends, I have a feeling it will be magical.

Fantastic recipe! I made the Died and Went to Pimento Cheese Heaven recipe from Food.com and added bacon (b/c why not!). The pepper jelly just puts it over the top! I think this is one of the best appetizers I’ve ever made…thank you!
