Some weekend photos for you. It was a perfect mix of fun and un-fun. Fun included everything you see below, un-fun included paying $85 to replace my shattered iPhone screen, having a HVAC technician out to my house for the FOURTH time this summer because my air quit on me again and dealing with a leaky, running toilet. More on my escapade into plumbing will come soon. This should be entertaining! ๐
On Friday night my friend Lauren invited me to dinner because her mom was in town. We ate at Wolfgang Puck Pizza Bar where I enjoyed calamari, hummus and a wild mushroom pizza and then finished the evening with a walk down to Pinkberry.
Peach and coconut yogurt with their housemade version of Heath bar, mango, kiwi and mochi (<—– my favorite froyo topping of ALL TIME!).
I started my Saturday morning at Luna’s Living Kitchen where I got an amazing smoothie before heading off to work at Metro CrossFit. I selected “The Grey Hulk” at the recommendation of one of the staff members…wild berries, banana, hemp milk, spirulina, maca and hemp protein. It was really good but expensive.
I went to the Atherton Market after finishing up at the gym. I got a lot of great stuff including shishito peppers (which I’ve been loving!), mini bell peppers, corn, eggplant, yellow cherry tomatoes, red tomatoes, pork sausage and chicken.
I made lunch featuring my new farmers market finds. I sauteed eggplant, shishito peppers and bell peppers and then served it over rice topped with cherry tomatoes, feta, basil and a splash of red wine vinegar. Yum!
I spent the rest of Saturday running all over Charlotte getting my iPhone screen repaired, shopping at Target and Home Goods and subbing a yoga class. Reward after was sushi for dinner. Started with ahi tuna tacos.
And then a mix of eel, shrimp, tuna and salmon sushi. It all tasted as good as it looks!
I’ll catch y’all up on Sunday later today but I’ve gotta get going! It’s going to be a great Monday…if I can survive this CrossFit class I’m taking in a few minutes. The WOD today is so brutal.

I LOVE ahi Tuna tacos…they are so delicious and refreshing! I am definitely working on being productive, positive, and patient this week. It is Monday already, so it is time to just get after it and do it. No excuses! XOXO

I absolutely love Luna’s!! It is quite expensive, but one of my favorite treats when in Charlotte! (: And Pinkberry balances out the un-funs. always. (: Hehe!

Ack … you’re reminding me about my iPhone … it’s been shattered in one corner for a few months (that’s what happens when you’re trying to use it as a flashlight while running early in the morning and you fall … oops). It’s still useable so I haven’t gone to get it fixed yet but I should just bite the bullet! I share your love for mochi as a fro-yo topping and for shishito peppers (although I have never cooked them myself, just had them at restaurants!).

Mochi is definitely one of my favorite toppings as well! The plain tart, mochi, and strawberry combination is to die for ๐

Hey Jen – where in Charlotte were you able to get your iPhone screen fixed for $85? I just shattered my screen this weekend =( I have the insurance but I think the deductible is still more than $85. I did go to the AT&T store but they said they couldn’t do anything.
Secondly, great pic of you and Lauren! I know Lauren and Jeff from high school and they are really great people. Glad you all had such a good time at dinner!
Ok I’m just getting into CrossFit (I want to do it because I’ve heard it does wonders for helping with speed) but I’m totally overwhelmed by understanding all the acronyms etc. I guess I should just fork over the money and attend a gym for a month until I get the hang of the workouts? What do you suggest for a first timer?

just jump in and try to learn the ropes. it’s like anything you start new…yoga, running, bodypump, etc…all have their own language and you will learn by doing!
