Thanks for the great feedback on yesterday’s yoga post. And thanks again to Brittany for the inspiration. ๐ I really enjoy writing posts that aren’t so “this is what I ate, this is the workout I did today” so it was a fun one for me!
Now, back to “this is what I ate.” Ha.
I was in the mood for a roasted veggie dinner last night. These dinners are so easy because I heat the oven to 400 degrees and then throw whatever I have onto baking sheets, season it like I want and then let it do its thing. I roasted tofu, sweet potatoes, zucchini and mushrooms.
I am in a major breakfast rut. Usually I am happy with oatmeal, overnight oats or Greek yogurt with granola and fruit but lately those options haven’t been appealing. I had oatmeal Monday for the first time in weeks and choked it down. This morning was fruit, granola and greek yogurt and it was just “eh.” Maybe it’s time to venture into new territory and try smoothies or eggs instead.
Lunch, on the other hand, was very appetizing. I made a salad featuring last night’s roasted dinner. Spinach, spring mix, tofu, sweet potatoes, zucchini, tomatoes, carrots, toasted walnuts, apples, dried cranberries and goat cheese. I have been out of goat cheese for a couple of weeks and it tasted so good on my salad. I love the goat cheese/sweet potato combo.
I love pizza. I made homemade pizza on Sunday night and thought about having leftovers for dinner all afternoon. Whole wheat crust with tomato sauce, mushrooms, smoked sun dried tomatoes, artichokes and pancetta with Italian blend shredded cheese. I usually do salad with pizza for my veggie but I wasn’t really feeling it since I had salad for lunch. I decided on green beans instead. Random but good!
Topic switch. In general, I would say that I have a pretty decent taste in music. I lean towards indie rock/folk/bluegrass kind of stuff. Well, teaching yoga has exposed me to the glorious world of dance/pop music and now I’ve found myself a little in love with…
Yes, the Biebs. In all of his mini-JT glory. I have to admit that I like his new album. I am now playing a rotation of three of his songs in my classes. Who am I? ๐

i love lots of things at tj’s – here are some faves off the top of my head…
– pizza dough
– hummus
– trail mixes
– olive oil (cheap and good for cooking)
– pumpkin butter
– TJs brand peanut butter (salted chunky or creamy)
– harvest grains mix (with pasta/rice)
– TJs brand frozen veggie burgers
– TJs brand frozen masala veggie burgers
– frozen corn and black enchiladas
– blue corn chips
– they have a great/affordable cheese selection (and cheaper wines!)
– iced cranberry oatmeal dunkers
– salted caramel chocolate bar (SO good!)
– i like their store brand breads – especially the english muffins, bagels, ciabatta and honey whole wheat sandwich bread
– honey pretzel sticks
that’s a start! i’ll let you know if i think of anything else!

I drink green smoothies a lot for breakfast, but got in a smoothie rut too. I eat a lot of eggs during the week. Usually two eggs or one whole egg & two whites scrambled with veggies. There are so many ways to vary the veggies, make it in a wrap (love Ezekiel wraps of half an Ezekiel english muffin), add salsa, etc. It is one of my favorite ways to get lots of veggies in my day!
i eat eggs and egg scrambles a lot for brunch/lunch but not for breakfast. i did have one this morning through with fruit and toast!

Hahaha love this! I used to teach dance to children and all they wanted was Justin Bieber music so it definitely grew on me!
I never was into The Biebs until I saw him on Ellen and absoultely fell in love with the little guy. He seems like such a genuine, sweet person! I love how his mom and grandparents travel with him. So cute
he is cute and such a baby still! hope he doesn’t turn out all crazy and corrupted!
I love the Biebs. My sisters friend is in the music video at the beginning. I just about died when I saw it. So jealous. He is just the cutest. Your eats always look so fabulous! I love roasted veggie dinners, so simple and fast!

For breakfast my fav lately are the sandwich thin toastedwith a over easy egg, alvocado, and some pepper jack cheese. Amazing, filling and good protein! Or a breakfast burrito!

I too was in a breakfast rut. The thing that got me out! JUICING! I’ve become a juice addict! Yesterday, grapefruit, orange, green apple, and spinach! YUMMY! Today I think I will have, mango, Gala apple, blueberries and spinach, sounds good I know!
Maybe that’s what you need to liven up that same old same old breakfast rut!

Jen, it is a little messy to clean as there are several parts to wash but it’s no big deal. I use the pulp in homemade bread and garden compost. Love the Crossfit posts and pics? After the 4th I’m taking my first Crossfit class! Excited!

I am a recent college grad and have began studying form my ACE PT Exam. I began running in January of this year, after taking a 5 month hiatus from my dance career. Running has become a huge part of my life now and I am training for my first half marathon on August 18th! I am beyond excited to find someone with similar interests as me, and I look forward to reading more!

sounds so good! avocado is pretty much on the same level as peanut butter for me – the more ways i can find to incorporate it, the better!

Breakfast idea: whole wheat bagel thin/enlish muffing/toast with peanut butter and fruit (bananas, strawberries, blueberries, etc). I like Kat’s idea too about the egg, avacado, and cheddar combo.
that is my go-to pre-run fuel! ๐
I’ve noticed that I started not liking my granola or oatmeal breakfasts so much because I was craving protein. Yesterday I took egg whites and added ground turkey and feta with vegetables. Sometimes I add salmon. I feel better if I have more lean proteins throughout the day.
i am trying to focus more on that too. i was really good about it for about a month but have been sliding lately. need to get back on it!
๐ Carbs are always so tempting. My doctor told me to eat about 1.5 grams of protein for every kilogram of body weight so now I’m trying to up my intake — I didn’t realize how many carbs I was eating and how little protein I was getting. Hopefully I will body muscle. I’ve been reading your blog and I’m doing more lifting now — I am the cardio queen — it is so easy just to spin or run.
So 1 – I had eggs and a smoothie for breakfast and it was absolute delicious. 2 – I have had “boyfriend” stuck in my head since I rolled out of bed this morning.
I LOVE that song! It’s on repeat for me. I also have mad love for JT, so the Biebs was a natural.
Sweet potato and goat cheese are one of my favorite combinations!

I am a new reader… LOVE your blog. I usually eat the exact same type breakfasts as you, but I also have (recently) gotten a little sick of them.. sooo I have been making a simple smoothie that I now love.. almond milk, rasberries (frozen from whole foods), peaches (fresh or frozen), spinach, 1 packet of stevia, some cinammon, and a pinch of wheat bran. It’s delicious. Thanks for a great read!!

I was feeling that breakfast rut a few days ago too! Nothing seemed good or satisfying. Thankfully I am out of that rut and I hope I stay far away from it in the future!

I actually used to have a secret (kind of) obsession with Bieber even when he released his first single when he was literally a little kid. My friends used to make fun of me for being a fan and now practically everyone likes his music! I may or may not have been fifth row at his last concert ๐ And yes, I am slightly embarrassed by that but he is so talented and adorable
