Hello, hello! I hope that Monday was kind to you. Mine was SO good but unusually busy.
– Subbed 6:30 a.m. hot vinyasa class at Y2
– Breakfast, shower, answer emails and meal plan from 8-9:30 a.m.
– Whole Foods to shop for my client 10-11 a.m.
– Meal prep for my client 11:15-3:30 p.m.
– Yoga private 4-5 p.m. at Metro
– Teach CrossFit 5:30-6:30 p.m. at Metro
– Teach Circuit Training 6:30-7:30 p.m. at Metro
– Workout 7:45-8:15 p.m. at Metro
– HOME TO RELAX at 8:30 p.m.
This is a very abnormal(ly busy!) Monday for me but my Tuesday and Wednesday will be very abnormally (and gloriously!) slow so it all balances out in the long run. One of the most challenging things about doing what I do as a career (writing, training, teaching) is the ebb and flow. It’s really hard to create consistency when the majority of your work depends on when other people want to work/workout.
The most beautiful part of this day was the lack of online time. I am loving spending hours in the kitchen on Mondays using my hands and preparing meals for my client. It’s such a therapeutic and awesome outlet for my energy and passions. It’s also nice to use other senses like taste, smell and feel in my work.
When I did arrive home I wanted two things. 1) Pizza. 2) Ice cream.
I was too lazy to go to the store to buy pizza dough so I improvised using ALDI flat out wraps. It worked perfectly! I heated the oven to 375 degrees, brushed the flat bread with a little olive oil, baked it on both sides for about 1-2 minutes per side and then topped it and baked it again for about 5-7 minutes. I used pesto as my base and then proscuitto, sundried tomatoes, artichokes and an Italian blend cheese. Once it came out of the oven I scattered it with arugula that I had tossed with olive oil, lemon juice and salt. The arugula put the flat bread over the top. So good. I want to eat the same thing again tomorrow night!
About that ice cream…the candles are in celebration of my blog’s FOURTH BIRTHDAY WEEK! And we’re celebrating big. In the last four years I have published over 1,240 posts…that’s an average of 310 per year and at least triple as many hours in photo editing, writing, product testing, etc. I’m not certain what the future holds for this blog but as of now I am grateful to have this space to share, learn and grow.
