I woke up at what I thought was the middle of the night. I checked my phone and it was 4:50. My alarm was set for 5:15 and I was wide open so I figured it best to get out of bed while I was half alert rather than sleep for 20 more minutes and wake up groggy. Isn’t it the worst when you wake up and think it’s like 2 a.m. and you can sleep longer but it’s really time to get up? And what is it about waking up in the 4 o’clock hour that just feels wrong? Wah…
So I found myself in Harris Teeter doing some shopping at 5:30 a.m. I normally stop in to get coffee at the Starbucks attached to HT because it opens so early but today I was out of Greek yogurt for my breakfast so I ventured into the actual store since I had some time before my 6 a.m. client. The next thing I knew I was buying Luna bars, Chobani Flips, Vitamin Water and Salt and Vinegar Almonds (<- ADDICTIVE). And I did manage to also leave with my grande bold. It’s been a long day!
Breakfast and lunch were not noteworthy but my afternoon baking and cooking projects were. Since my Thursdays start so early I try to get out of the gym mid-afternoon so I can have some downtime. I love to play in the kitchen and clean up the house during this time. I made my first foray into gluten-free baking this afternoon and made mini carrot cake cupcakes.
I was very hesitant about how they would turn out but they were surprisingly pretty awesome! No gluten, no refined sugar and really tasty.
It was 40 degrees and raining in Charlotte today (I’m not even kidding…it sleeted this morning) so I made a pot of soup this afternoon with farro and veggies. It turned out to be healthy, hearty and the perfect early spring soup.
Dinner after teaching BodyPump (so fun!) and 22 minutes on the elliptical (so boring! I really just wanted to read a magazine and zone out for a bit) was soup and a feta and chive scone that I pulled from the depths of the freezer that reheated beautifully.

Happy Friday, Jen! I’m with you–when I wake up anywhere from 30 minutes to one minute before my alarm goes off, I always get out of bed. Like this morning, for example, I woke up about 10 minutes before my alarm. I’m a morning person, though, so no complaints here. 🙂
I hadn’t tried farro until a few weeks ago but I’ve been obsessed ever since! I’m studying in Italy right now and you can find it everywhere here. I love its chewy texture! Yummmmm!

It was gross in Boone, NC too, 30 degrees and sleeting all day, definitely a good day for soup and a big cup of coffee. I’m ready for spring weather to come to NC! I’m excited for the carrot cake cupcake recipe, they look really delicious!

Wow you’re so lucky it’s 24 hours! I always want to zip into Whole Foods before work and after the gym. But of course it doesn’t open til 8am!! What kind of Type A people can wait for Kombucha til that hour 🙂
On the other hand, waking up in the middle of the night, expecting it to be morning, time to get up, then checking my phone and learning that it’s only 1:00am. YES!

I feel your pain with waking up too close to your alarm to warrant falling back asleep. Definitely got up one morning this week at 4:30 – it’s a bummer when you crash and burn later in the day but it is nice being able to be productive so early in the morning.
