Breakfast has been orange the past couple of mornings.
Sierra Tweeted about having pumpkin oat bran for breakfast yesterday morning and it inspired me to reach into the depths of my pantry and pull out a can of pumpkin. Pumpkin banana oatmeal with pumpkin butter and maple peanut butter for breakfast yesterday.
Pumpkin, banana and blueberry overnight oats topped with pumpkin butter, sunflower seed butter and Crofter’s all-fruit preserves for breakfast this morning. I definitely associate pumpkin more with fall and winter eats but it’s been a good spring treat these past couple of mornings. Sullie is loving it too because I usually put a spoonful in her breakfast! ๐
Pumpkin…eat it all year or eat it seasonally?
You didn’t hear from me yesterday because my arms were too tired to type after doing this workout. We did the CrossFit Regionals workout and it was killer. There was no way I was going to do the prescribed weight so I did band assisted pull ups and used a 55 pound bar for everything except for the overhead squats, I just used the bar for those. I finished in 25 minutes flat and I think I was shaking for an entire hour after finishing this workout. I had that awesome all-over muscle exhaustion feeling. I had to teach yoga after and warned my students not to be alarmed if I dropped them when I was assisting them. (I didn’t.)
To say that I slept well last night would be an understatement. I went into a solid 8 hour coma but woke up feeling amazing and ready to tackle the day.ย So much to accomplish. I’m headed off to the new location now. They’re finishing up all the final touches on construction. I’ll post a photo in my next post.

My husband is adjusting athletes at the CF North Central Regionals in Chicago this weekend and then in Los Angeles for the championship this July. All of the athletes impress me with their physical abilities AND their mental drive.
Yay for Metro’s new opening!! I know you have been so so busy. It may not be the best time to ask, but would you mind sharing the exact measurements for your pumpkin overnight oats? I am struggling with getting the right consistency in mine, and they are tooooo goopy.

i’m so bad about measuring anything…my strategy is usually to be really light handed with the liquid at first and then slowly add more until i get a consistency that’s slightly runnier than how i want to eat it. once it sits for a while (about an hour this morning) it usually ends up being perfect. i would say i probably used about a little less than 1/4 cup pumpkin, 1/4 cup almond milk (again, maybe a little less), 1/3 cup greek yogurt and 1/3 cup oats. hope that helps a little!
Teaching and working out is seriously exhausting. I know when I used to teach 3 classes a day, I was dead tired!
I love pumpkin! How do you incorporate it into overnight oats? (I usually do 1/3c. oats/almond milk/greek yogurt and 1t chia seeds). I dont want the oats to be liquidly if I add in pumpkin and have it not set up thick and doughy. Thanks Jen ๐ Have a great day!
i usually just add a big spoonful of it and then i’ll reduce the yogurt or almond milk a little bit. worked great this morning! ๐
I definitely associate pumpkin with the fall months, but I will eat it at anytime. This past September, I went to the store to purchase some pumpkin and could not find it anywhere! When I asked a lady at the store she said that it was out of season?? Canned pumpkin??? A seasonal item?? I thought it was funny and just went across the street to another store to purchase it!

That workout looks INSANE. I so want to try it though! I love pumpkin all year round. I put it in my breakfast yesterday too ๐ I used oat bran though, so good. I love putting it in homemade protein bars too, its such a versatile ingredient.
Thanks for the pumpkin suggestion. I added it to my Coach’s Oats this morning, along with some almond milk and cinnamon. Thinking some ginger spice might be nice to add as well. BTW, I am completely addicted to Coach’s now. ๐
Also, I stock up on pumpkin as we add it to what we feed our dogs. Pumpkin is supposed to be really good for them!
I put pumpkin in my puppy’s brekkie too! She loves it!
I love pumpkin all year round but I’m cheap and I only buy it when it’s on sale in the fall. ๐
I am fortunate enough to be able to eat pumpkin year round since they always sell LIbby’s at Stop and Shop so I say eat pumpkin all year round ๐ I am so impressed with how much you can lift – you rock girl!
Thanks for the shout out! I eat pumpkin year round, but if I want it, it involves making it from scratch…not as easy as opening a can. I have found it freezes pretty well, so when the craving strikes, it’s easy.
Your eats are always inspiring. Your avocado always seems perfectly green and ripe on your salads.
I love that you are also into Crossfit at the moment, I started a couple weeks ago and I am loving your posts about learning the movements and your workouts. Wallballs are also my downfall.
