Last night was a little bit of a let down.
I had plans to see Kings of Leon with some friends but the weather was not cooperating. Our seats were on the lawn and there was an 80% chance of storms and a hazardous weather warning. We decided to chance it anyway and drove to PNC Music Pavilion. When we arrived the sky was looking a little ominous and the temperature had dropped 20 degrees!
We went in to catch the opener, Young the Giant. I actually really like them and have listened to their music for a few years. They were good. While they were playing the lightening got pretty intense and it started to rain. We had all decided before the show that we were not going to stand in the rain (and lightening) on the lawn so we bailed. Once we made it into the car and headed to dinner the sky opened up and it poured. While I would have loved to see KOL again, I was happy with our decision.
Especially when we ended up warm and cozy with a glass of wine and this delicious spinach and artichoke gnocchi at Bistro la Bon. It was so good that we ordered a second plate.
We also shared meatballs.
And this delicious lavender chicken that was served over a pumpkin bread with a curry sauce. It was so different but really delicious.
So we made the best of the night! 🙂
In other food and eats news. Starbucks (black coffee) + a smoothie is pretty much the standard for my mornings.
Salads for lunch.
My salads have been made EXTRA awesome lately thanks to this find at Trader Joe’s. Pumpkin spiced pumpkin seeds. They are seriously amazing. Buy them if you have a Trader Joe’s nearby.
Soup and salad. This is the first time I’ve craved soup with lunch in a long time. The weather is starting to turn. 🙁
I got a little creative with this dinner. I made a basil, sundried tomato and feta turkey burger and then baked it in a portobello mushroom cap. I spread hummus on top. It was a great combination!
I retested the zucchini carrot bread recipe on Sunday and polished off half of the loaf in 2 days. It is 100% a WINNER and I’ll be sharing the recipe in the next day or two.
And finally, homemade frozen yogurt with white chocolate chips and dried cranberries and chamomile tea.
What’s the last concert you attended?
I’ve been waiting to get my hands on that carrot-zucchini bread recipe since you first mentioned it! GIMME!! I haven’t been to a concert in a while, since moving out of DC cut my venue options down a lot. But in a few weeks I’m visiting a friend in Arkansas to see Foster the People, about which I am suuuper pumped.
Ooh I will be looking for those pumpkin seeds ASAP! I’ve been waiting for the pumpkin items to come back to TJ’s for the year.
I will keep my eyes peeled for the pumpkin spiced pumkin seeds because that just sounds way to good for words. I hope that means all things pumkin flavored at TJ’s! Love the portobello mushroom as the base for your burger – yum! Please share your recipe soon, I just had a huge baking fail trying pumpkin and zucchini together, the bread was too wet and never baked all the way through 🙁
If you try squeezing the moisture out of the zucchini first — which is admittedly a pain — it should help! Pumpkin zucchini bread sounds too good not to try again!

My parents recently moved back to the Charlotte area and I was on the phone w/ my mom on her way home and could hear the storm. I told her to call me when she wasn’t driving bc it was so loud I figured it was bad. I’ll look for those pumpkin seeds, that looks hella yum!
I saw Gavin Degraw, Matt Nathanson and Andrew McMahon (who i’ve been listening to since Middle School!!) It was an amazing concert, but luckily for me it was indoors. I just bought some ocra at the grocery store because it looked so amazing in your posts this summer. How do you make it? Just bake in the over at 400 with olive oil and seasoning? I’m looking for some inspiration during my Whole Life Challenge.

fun! i’m a big fan of the nice indoor venues these days. don’t love the huge amphitheaters.
for the okra, yeah. i just drizzle it with olive oil and season with sea salt and whatever else you want to throw in there and roast for about 15-20 minutes (depending on the size of your okra) on 400.

I think the last concert I went to was Billy Joel. I need to get to another one now that he performs so frequently here again! The rain is a killer for the outdoor concerts, I used to deal with that at the Jones Beach theater in the summer. I don’t go to concerts like I did when I was younger, I do attend a lot of sporting events though!

That gnocchi….YUMMY! I saw Kings of Leon in Denver a few years ago and we had lawn seats and it was POURING. They also came on 45 minutes late, which I thought was kind of rude. Last concert I saw was Dave Matthew’s here in Houston outdoors and it was so awesome. 🙂

Hmm…I’ve never cooked with lavender before. Or even though about cooking with it. It reminds me of hand soap.. lol

2) when you make your smoothie, do you end up usually making at least 2 glasses worth? i hope this question makes sense.
3) how do you make your salads so appetizing? i have a hard time eating salads every day because i get bored so easily and the only salads i like end up being from outside and filled with the bad stuff i’m supposed to be cutting out.

Last concert I saw was Zedd, Journey, Lady Antebellum and Blake Shelton all at an outdoor concert we call BluesFest here in Ottawa. It was a blast ! Luckily we only got rained on one night but I feel you with avoiding thunder and lightening! Especially with food looking that good!

The last concert I went to was actually Kings of Leon when they were here in Calgary back in April. It’s too bad you missed it, they put on an amazing show.

My last concert was just last night at Kings of Leon. Fortunately, I was under the cover. They are my favorite band and I would have cried had I not been able to see them as it was my first KoL show. I’ve been waiting like 4 years to see them live! I was worried the weather may shorten their set but it didn’t. Whew! Sorry you had to miss out.
My last couple of concerts were Gavin DeGraw and Matt Nathanson whom I’m seriously in love with still. I also love KOL and have seen them here in town. They put on a great show. So sorry you had to miss out due to weather. Concerts are one thing from my teenage years and early twenties that I just can’t let go of. I still catch as many as possible–which explains why I can’t hear half of what people say to me anymore! 🙂
I was at the concert too. We ducked for cover under the restroom overhang and luckily it pretty much stopped by the time KOL came on. I also had an emergency poncho with me. I learned my lesson after getting drenched at the Counting Crowes show this summer. Bummer you missed KOL, but your dinner sure did look delicious.
