Hello, hello! It’s 9:30 on Saturday night. I’m going to type up this post and hopefully be lights out by 10. I was in teacher training all day today and we start again tomorrow morning at 7:30 a.m.! I will recap the weekend for you guys on Monday.
For now, a collection of recent eats to share.
BREAKFAST
I haven’t taken many breakfast photos but I ate this most mornings last week. Plain 5% Fage Greek Yogurt with honey, homemade granola, bananas, raspberries and nut butter.
LUNCH
Sourdough with mayo, avocado, turkey, apple slices and cheese. Melted under the broiler.
Lunch at Whole Foods. Salad with a side of mac and cheese! 🙂
Snack plate with Wheat Thins, grapes, pineapple and cottage cheese with half a mashed avocado and sliced radishes.
Salad with greens, sliced apples, baked tofu, cashews, dried cranberries, avocado and hemp hearts.
DINNER
Sliders and a salad with lettuce, olives and soft boiled egg. This was takeout that Dorie brought over from Foxcroft Wine Co.
Steamed rice cooked in coconut oil, baked tofu, roasted chickpeas and roasted brussel sprouts. Everything topped with a yummy nutritional yeast/curry sauce.
Sourdough toast with mayo, avocado, a fried egg and cheese.
This is such a terrible picture. I am sorry. Tasted good though and I ate it two nights in a row. Roasted cauliflower and butternut squash and baked salmon.
ETC
There was a lot of ETC this past week but these peanut butter cookies from Earth Fare were especially notable!
Okay, I am so wiped out. Finn is stirring so I am going to dream feed him and then read. Tomorrow will be a long day of training followed by a drive back to Charlotte!

Great healthy food inspiration! I hope you and Finn enjoy these teacher training days. I’m sure they must demand a lot of energy, but sometimes the harder days can also be great days. My favorite cookies are Sarah McLachlan’s chocolate chip cookies. They are big, soft, and have coconut in them.
Kathleen – you are so right about sometimes the hard and intense days are some of the best days! And thanks for the cookie suggestion. I haven’t seen that recipe so I will check it out!

Love this post! Very doable, healthy everyday meals I could actually see myself eating. Love the baked tofu and cashew salad one as I don’t eat a lot of meat but am always looking for good ways to get plenty of protein. Definitely going to keep up on your content!!
