It’s been a busy but unplugged Labor Day Weekend, which has been really nice! My nieces have been here visiting with me and our days have been full of adventures. Getting in bed tonight with my laptop felt like a luxury vacation after a day of baby + energetic nieces + running all over Charlotte + still being slightly crippled sore after teaching cardio strength on Friday.

For now, a collection of things I’ve been eating…which has been all over the map. I don’t really know what to say about postpartum/breastfeeding eating other than I’ve never been so grateful for anything heat and eat and/or convenient in my life. I’ll also reiterate that I’m not following any special diet or counting anything, or really even making an effort to eat as “clean” as I might have in the past. It’s pretty much been whatever sounds good, whatever is easy.
BREAKFAST
I’m still doing smoothies but you’ve seen enough of those. I’ve also been enjoying scrambled eggs, fruit and cinnamon toast.
Different morning, same breakfast.
LUNCH
Avocado toast on sourdough with tomatoes and bacon.
Salad with arugula, turkey, tomatoes, blueberries, avocado, cashews, dried cranberries and feta. The greens were tossed in balsamic, olive oil, sea salt and honey.
The most delicious kale, broccoli and quinoa salad with pistachios, avocado and dried cranberries. I topped it with my tahini turmeric dressing. I need to put this recipe on my blog! Buttered freshly baked sourdough on the side. The day one slices are always the best!
DINNER
So random but so good. Cheese grits with pulled pork, barbecue sauce and collard greens. The pulled pork and collards were from a Nourish Foods meal and they were both really good!
Another Nourish meal…they saved my life last week. It was very nice to heat and eat such good, hearty meals. This was beef with bernaise sauce, carrots and spinach souffle.
Terrible picture, delicious food…this was my last Nourish meal and it was barbecue chicken with a warm sweet potato salad. The collards were supposed to go with the chicken (so it wouldn’t have been so orange!) and the sweet potato salad went with the pulled pork but I mixed and matched the meals!
Nourish Foods sent me a selection of meals to try but didn’t compensate me for this post. I’m happy to spread the word because it’s a great option for those who want meal delivery that doesn’t require cooking.
ETC
As you guys know, I’ve been on quite the ice cream kick this summer. This was a mix of peanut butter cup ice cream and vanilla.
But making a comeback is cake. I have had a lot of cake in the last couple of weeks! Two slices of carrot, a slice of coconut, a slice of chocolate and a few cupcakes. Having a daily “treat” kind of makes my day! 🙂

I love a sweet treat every day. I’ve bookmarked your chocolate zucchini bread to make for upcoming afternoon coffee breaks 🙂 Lately, I’ve been all about brownies or fruit with honey and yogurt.
