I hope you’re all enjoying the weekend. I didn’t get a chance to check in yesterday because the first copy deadline for my book is April 1 and I have been covered up trying to knock that out. I was out with a friend last night and she asked how I was doing. I replied that I was feeling good and productive but happy not to be in front of a computer screen. She commented that I was “digitally fatigued.” I thought that was a great way to put it!
I have a lot of random eats to share with you. This has been a bit of an off week. I was out Wednesday, Thursday and Saturday nights so that gets me off track with cooking but I’m always grateful for time spent with friends!
Breakfast
No breakfast to share with you because I drank a smoothie every morning. And I think we can all agree that you’ve seen enough of those around here lately!
Lunch
I made a big batch of my Mexican Quinoa earlier in the week and used that for lunches and dinners. I served this lunch bowl over spinach and topped it with cheese, plain greek yogurt, guacamole and a lime wedge.
Turkey wrap and salad. I have been buying an arugula blend lately for my salads and it really kicks up the flavor. I’m going to do a wrap tutorial soon for y’all!
Lunch at Zoe’s Kitchen with a friend. I ordered the chicken salad and fruit plate. I really like the food at Zoe’s. It’s fresh and light.
Dinner
Apple stuffed pork chop with roasted sweet potatoes and baby bok choy.
Kale, feta, pistachio and golden raisin flatbread when I was out one night. So good!
I used the leftover Mexican quinoa mixed in with some sauteed ground chicken to stuff peppers.
I served it with broccolini. This was a really great dinner. I don’t make stuffed peppers often but they are really tasty.
Etc.
I have lots of ETC eats for you today!
We discussed the book Language of Flowers for my book club on Thursday night and one of my friends went all out with the flower theme. How beautiful are these ice cubes?
She created a signature drink for the night.
And also baked shortbread cookies with fresh flowers pressed in. I was so impressed!
ALDI vegetable chips and string cheese while I was camped out in front of the computer. Tip for not eating an entire bag of chips…portion it out!
Cheese plate while out with friends.
And a meat plate to go along with. I made my dinner out of these two things and it was perfect! 🙂
Especially when I wrapped up the night with a stop at TCBY!!!

Since a lot of my job requires me to be on the computer (outside of blogging) I have experienced digital fatigue a time or two for sure! Sometimes it is just best to step away and get away from the computer for a while, then when you come back you are ready to go!

Girl, I absolutely have experienced digital fatigue. It usually happens on days when I’m at my 9-5 and my bloglovin is open, my Facebook is open, my Twitter is open, and I’m trying to read/comment on all my favorite blogs, and I literally sometimes just have to close the computer and say I need a break! It can be exhausting!

If you ever guest teach on the West Coast (CA–SF??) I will be there for sure. I may have to visit you once I’m done with school here..I just need to have a vacation planned…you make it seem like there’s a lot to do out there! I love frozen yogurt!! I have never been to a TCBY, but I will have to look for one near by! And the fancy ice cubs and short bread look amazing! I don’t think I would be able to get it to look like that pretty!

I definitely have experienced digital fatigue – almost all my work involves being in front of a computer screen. The past year I’ve been teaching part-time and appreciate it just because it gives me something non-computery to do.

i’m constantly on the computer ! i totally get what you are saying. I work a minimum of 10 hr days (blah) and almost all is spent on the computer. I had to work this weekend several hous saturday and sunday as well and today i got to work and just sorta looked at the computer and stared. i almost dont know what i was looking at….like waiting for it to tell me what to do ? it was almost bizarre and i was thinking…its only monday ! ahhhhhhhhhhhhhhhhhhh. so i can relate and i know its bad for my eyes, posture, wrists,e tc. i sure hope they invent some way to cure carpal tunnel that is different from what they do now cuz i figure i’m definately gonna have it ! My work also sends out health blurbs sometimes and we recently got one about how sitting all day takes X numbers of years off your life. Its like gee thanks…u are notifying me that i’m literally dying at my desk right now ; )
I totally experienced digital fatigue last week and I disconnected this weekend and it felt amazing! We all need to do it once in a while. That flatbread looks AMAZING as do all those cheese and meat plates. Nom Nom! XOXO
