The week has been off to a delicious start over here!
I did some baking on Sunday afternoon and made this zucchini carrot quick bread. I was hoping to share the recipe with you but it’s not quite ready yet. I want to try it again with a few modifications and see if I can take it from really good to great. I don’t like sharing recipes that I’m not 100% happy with myself. And I’m only 95% happy with this one.
Which hasn’t stopped me from eating slice after slice for breakfast or an afternoon snack with a little tea.
As usual, there have also been a lot of green smoothies and I’m back on espresso again. This is primarily due to the fact that I’m out of Tassimo coffee t-discs and haven’t reordered. I have a Tassimo and a Nespresso. My Tassimo can do espresso but I prefer the Nespresso espresso and just use the Tassimo for coffee. I have an endless supply of Nespresso capsules so I’ve been drinking a lot of it lately. (Maybe that’s why my clients say I’m being so tough this week…highly caffeinated!).
I met a friend at Luna’s Living Kitchen for lunch on Monday for a blog/fitness industry/website brainstorming session. We both ordered this arugula salad with pecans, pumpkin seeds, raisins, cashew “cheese,” pears, spiralized veggies, pears, avocado and a veggie burger.
On Tuesday I had the birthday luncheon for my photographer friend at Bricktops. I ordered the Palm Beach Salad that is a beautiful stack of avocado, crab, tomatoes, shrimp and hardboiled egg.
I was finally home today to make lunch! I made a wrap with honey dijon, avocado, turkey, brie, tomatoes, brie and arugula. It was so good!
I’ve been cooking dinner at home this week. On Sunday I made a big pot of coconut green curry using eggplant, green beans and zucchini from the farmers market along with some tofu.
You can find my base recipe for Coconut Green Curry in this post. I served it over brown jasmine rice and I’ll always recommend a healthy dose of Sriracha on top! I ate the leftovers last night. I’m not a big leftovers person and usually just cook a single serving of whatever I’m making, but this is one of those recipes that’s even better leftover.
On Monday night I had a major craving for my fig and prosciutto flatbread. I love it so much!

I have silly question! Do you grill your wraps? They always look so delicious and I love wraps but would love them slightly toasted or warm!??? What’s the secret!
I haven’t made the best meal yet, I’m hoping to make a salmon curry tomorrow night. A great way to add fish into my diet and with curry sauce, makes it EXTRA delicious!

I use my George Foreman grill to do that (mostly because I like the way it melts the cheese just a little).
I bought my first butternut squash of the season and oh my goodness was it delicious. I roasted it with coconut oil, a pinch of cinnamon and a drop of pure maple syrup. Even my son ate it, it was that good! I need to get to the store to grab another one since I polished this one off in three meals!
love, love, love butternut squash. i eat it all winter long! i bought an acorn squash but haven’t taken the plunge to roast it yet!

Best meals here? I’ve been loving on greens smoothies per usual and had custard oats a few times for breakfast. Best dessert were the cookies I made with Kodiak powercakes mix.

I think you make custard oats by whipping an egg into the oats right when they are almost finished cooking. Makes them super creamy and filling!

Best thing I’ve cooked so far this week was a big pot of chili to have while watching football on Sunday!

i can’t do chili until the leaves turn and there’s a chill in the air. football season certainly does put me in the mood for it though!

thanks! 90% of the time that you see photos that I talk out at restaurants, it’s with my iPhone. home pics are nikon DSLR with 50 mm lens unless I’m lazy (like that green smoothie pic) and just snap one with my iPhone.
Those salads look so delicious! I love ordering salads from restaurants and being pleasantly surprised that they’re huge and better than a regular entree.
hmmm the best thing i’ve cooked. on sunday i made mexican lasagna and it was good. i had leftovers last night. i am a HUGE leftover person. i almost never cook just for 1 but i have celiac so have to cook basically everything i eat so to attempt to make that semi-manageable i cook in bulk. I’m planning to make grilled steak and sweet potatoes tonight (which will turn into leftover steak salad tomorrow for lunch : ) ) so hopefully that will top the lasagna but it will be close !
I’ve also been hungry for chili but like you i refuse to do it yet. when i have my first chili of the season somehow i feel like i’m admitting defeat and accepting winter is on its way. same with breaking out my coat. i know its silly but i feel like if i can just hold out….it won’t happen ???
Your meals seriously ALWAYS look the best! The best thing I have cooked this week? Probably a roasted green bean, sweet potato, farro salad with yummy dijon/balsamic dressing…I feel like I could have eaten that every day this week (and I’m not a leftover person either!)
I haven’t been to Bricktops in forever & now you’ve got my mouth watering with that awesome palm beach salad. This week was pretty slow on the cooking homefront for me, but i’ve been in atlanta this weekend, and i have to say that the best thing that i’ve eaten here has been Jeni’s Icecream – they have a new store that opened and it is amazing! i ordered the flavor – saison with sunflower seeds & golden flax…just listen to this description:
Grass-grazed milk imbued with earthy Rockmill Brewery ale, and packed with double-toasted sunflower, flax, and pumpkin seeds. A sweet-and-salty summer respite. I had it with their sea-salt chocolate sauce and homemade whipped cream.
Love your meals this week! Less meat than usual! Try your lunch wraps sans processed deli meat you won’t miss it and soooo much healthier!!
