It’s been a week since I’ve shared recent eats so I want to quickly show you some of my favorites. Many of my friends and clients have told me that these posts help with meal inspiration so I’m trying to do them 1-2 times per week
Breakfast
Green smoothie, green smoothie, green smoothie!
Lunch
Mixed greens, arugula, strawberries, roasted butternut squash, walnuts, dried cranberries, avocado, honey goat cheese and salmon with homemade honey dijon balsamic vinaigrette.
Arugula, Mediterranean lentil and couscous salad and a Hilary’s Eat Well “World’s Best Veggie Burger.” This was my first time trying Hilary’s Eat Well products (got the veggie burger at Whole Foods) and I was impressed. I will definitely be sampling other products from this brand.
Tofu and avocado wrap, tomato and red pepper soup, strawberries. I’ve been off wraps this week. This is the only one I’ve had and it was last Saturday.
Lunch bowl with arugula, Mediterranean lentil and couscous salad, tofu, roasted eggplant and hummus. Love lunch bowls!
Dinner
Salad, asparagus, beef and chicken kabobs and cauliflower mash with parm and truffle oil. Ate this at a friend’s house on Saturday evening.
Cajun marinated chicken breast, roasted butternut squash and roasted okra. First okra of the season!
This is probably my favorite dish of the week. I got super creative when plating it. I roasted eggplant, tofu and portobello mushrooms. I wasn’t sure what I was going to do with them but the creative juices just started flowing. I layered them on a plate and topped it all with pesto, feta, sundried tomatoes, chopped artichokes and fresh parsley.
Here’s the view from the other end of the plate. Pesto makes everything 10x better. This dinner was awesome!
Baked salmon, kale chips with sea salt and nutritional yeast and leftover roasted butternut squash. This came together in about 15 minutes when I got home from the gym last night. Super healthy and super satisfying.

Snack plate at a friend’s house one night. Love grazing on things like this.
I baked the most delicious muffins and enjoyed two of them with a cup of coffee yesterday as my afternoon snack. I can’t wait to share the recipe…Lemon Chia Olive Oil Muffins! I wrote the recipe myself and I’m super happy with how they turned out. My kitchen inspiration and creativity has been so good lately!
And finally…ice cream. Every night. It’s been one of those weeks! 🙂 🙂 🙂

You can never go wrong with cheese plates…They are so much fun to graze on and even better with salty meats and delicious red wine! CANNOT wait for the Erin McDermott giveaway…love all the pieces she has been creating. Happy Hump Day!
Do you normally do some food prep and menu plan?
katie – i used to be a religious food planner. not so much anymore. more about stocking fridge with proteins, fresh veg, fruits and keeping a stocked pantry. can always make something from that. thus the reason you see a lot of protein + roasted veg on my blog. i never food prep. i just can’t get into it! i’m lucky to be home most days to make breakfast, lunch and dinner and not to have to pack them to go.
Your meals always look so fancy and tasty! I am usually creative but I usually mix and match a bunch of stuff up in a bowl or casserole and eat it all together…aka not very pretty 🙂 I am with you on the ice cream week!

a variety of places but always wild caught and not farm raised…the salmon in this post was from a little local market.
