Thanks to everyone for your thoughts and well wishes for Sullie.
I think it’s safe to say that this furry one is feeling better if the trail of toys means anything. It seems to have just been a GI infection. I will keep you updated if anything else comes up but I think we’re in the clear for now. My heart can settle a little!
Time for a look at recent eats! Make sure to get down to the dinners because they’ve been extra delicious as of late.
Breakfast
Green smoothies every morning except one where I was craving something a little different. Peanut butter and banana muffin and pineapple Greek yogurt.
Lunch
I’ve made some really good salads recently! I loved this combo of greens, hard boiled egg, roasted butternut squash, chick peas, strawberries, walnuts, dried cranberries and honey goat cheese with whole grain honey mustard.
Salad with greens, pears, blue cheese, walnuts, dried cranberries, beets, and avocado with honey balsamic + half of a turkey wrap.
Another salad extravaganza similar to the first one.
Another salad but this one from Whole Foods and I won’t even try to go through what’s in this box. #saladbarproblems
Dinner
Balsamic slow cooker pork tenderloin over grits with roasted brussels sprouts. Recipe for pork coming soon!
Homemade spaghetti sauce with local beef and Italian sausage that I picked up at the market. Served over spaghetti squash with a salad.
LOVED THIS DINNER! Tilapia with chili-lime butter served over copycat Chipotle cilantro-lime rice with roasted broccoli.
Burrito bowl! Leftover cilantro-lime rice, sauteed ground beef, black beans, tomatoes, avocado, cheese, cilantro, plain greek yogurt and salsa. I love any meal in bowl form. Hit the spot!

I love the cilantro lime rice, never tried it at home before though! Do you use a special type of rice? i have found in my fried rice recipe the type of rice is important. Recipe please 🙂

By the way, I need some salad dressing inspiration! I HAVE to ditch the bottled ranch, but am having trouble finding a suitable (preferably homemade) substitute. The whole grain honey mustard looks good… I think you have a balsamic dressing that looks good too. Any simple recipe suggestions???

All of it can GET IN MY BELLY! Yeah for lots of salads being back…I have been making random spinach salads this week and spending a couple of extra minutes to eat them on my porch, since it has been absolutely beautiful here in Houston!

So glad to hear Sullie is doing better! Question though: in the first photo is she biting a stuffed animal and resting on top of it as the rest is pinned between her legs? Because our goldendoodle does that with his toys and I’ve never seen another dog do it!
