Hi friends. We arrived back in Charlotte tonight and I’m doing a quick re-pack and then heading out tomorrow for a teacher training weekend in Tennessee.
Within 15 minutes of arriving home, I had these two leashed up and we went out for a long walk. It’s been hard to travel so frequently on the dog front but I am very lucky to have really great dog sitters. I received regular text updates and pictures while I was in Florida. They got lots of love and attention, ball throwing and walking in. And while I’m gone for teacher training, a friend will be staying with them. Even still, it breaks my heart to leave them. Mom guilt is totally a thing with fur babies too.
Okay…a mix of recent eats from Charlotte + my time in Florida to share today.
BREAKFAST
Two eggs scrambled in Kerrygold salted butter, pumpkin apple bread with butter and raspberries.
Homemade plain yogurt, banana, homemade granola, raspberries and almond butter.
Pear and cranberry oatmeal. Similar to this recipe, sub pears.
Plain 5% Fage greek yogurt, Trader Joe’s pumpkin butter, homemade granola, figs and raspberries.
LUNCH
Lunch is brought to you by alllllll the sandwiches. This is egg, cheese and avocado with mayo.
Turkey, avocado, muenster and bread and butter pickles.
Another turkey, avocado and cheese sandwich but this one with cranberry cheddar and Wickles. If you haven’t tried Wickles, you totally should. They’re spicy and sweet and really yum! There were two more repeats of this sandwich that I’m not showing pictures of.
Salad with spinach, arugula, cucumbers, chickpeas, hardboiled egg, feta, spiced pecans and dried cranberries with honey balsamic dressing.
This was a sweet kale salad kit to which I added pears, avocado, sweet potatoes, turkey and hardboiled egg.
DINNER
Leftovers from the dinner party I hosted.
And leftovers reimagined again as a kimchi fried rice bowl. I chopped up the salmon and cooked it with leftover brown rice and chopped kimchi. Topped with an egg, feta and leftover roasted brussels sprouts.
Massaged baby kale salad with figs, feta and pumpkin spiced pecans. Trader Joe’s pumpkin butternut squash soup on the side.
Grilled cheese with the same soup as above. Can you believe this was my first grilled cheese since pregnancy!? I ate an impressive amount of them while I was pregnant.
This is a really good shrimp and pasta recipe that I introduced my dad to about 10 years ago and he still makes now!
One can never go wrong with frozen pizza.
And finally, we went out for dinner on my last night in Florida and I got this crab stuffed grouper. The grouper was so, so good and cooked perfectly. And the hush puppies…ahhh…they are my fave!

Still going strong on the ice cream. I had a bowl of Talenti peanut butter fudge and sea salt caramel two nights in Florida and the last night my dad brought me this non-dairy dark chocolate peanut butter bar from Haagen-Dazs that was very delicious.

Wow, that egg and avocado sandwich looks amazing! I’m 38 weeks pregnant at the moment and I’ve been consuming A LOT of sandwiches as of late. I feel like I have to eat every 20 minutes but I don’t have the energy to stand in the kitchen preparing anything more elaborate than a good ol’ sandwich. Lol! 🙂

Major dog mom guilt right here! We have a 1 year old Frenchie and we’ve had events that take us out of town the last 3 weekends in a row so she’s been boarded at her daycare. They love her and she has so much fun with all her fur-friends but omg I hate leaving her! ?

Ha! I too ate an amazing amount of grilled cheese sandwiches while pregnant. That was the only thing that ever sounded appealing.
For lunch I have been eating yogurt bowls on repeat. I recently tried Noosa yogurt and I am hooked!

What kind of turkey do you buy? Love sandwiches. My mom recently made a delicious apple and Gouda grilled cheese for me and I’ve been craving another ever since.
