But first, I’m going to catch you up on some recent eats. I have received so much great feedback on these posts and the ideas/inspiration that they generate. This week’s meals have lots of fig influence!
Breakfast
This morning it was my favorite recent green smoothie combo and coffee. I am so obsessed with Trader Joe’s frozen figs and have been using them in my smoothies every day. I like to do a PB&J theme with them and mix in banana, strawberries and peanut butter. So good!
Lunch
Really random salad with mixed greens, avocado, carrots, feta, sunflower seeds, tomatoes and sundried tomato chicken sausage.
Turkey sandwich with farmers market tomatoes, avocado, provolone, mayo and fresh basil.
Sunday brunch at Nolen Kitchen. I was so not in the mood for “brunch food” so I ordered this awesome salad instead. Mixed greens, beets, spiced pecans, herbed goat cheese, avocado and sliced apples topped with grilled salmon.
Dinner
Confession: the ONLY THING I wanted for dinner on Sunday night was frozen yogurt. I was so close to going to Yoforia but was already super cozy in my PJs so I decided to man up and make some veggies instead. I opened the fridge to see what produce needed to be used and then sauteed squash, zucchini, kale, mushrooms and sundried tomato chicken sausage and then served it over this lentil and green chick pea blend from Trader Joe’s and topped it all off with feta and balsamic. Random but delicious.
And tonight’s dinner was super simple but hit the spot. I used an ALDI flatbread and topped it with fig jam, prosciutto, goat cheese and a four cheese Italian blend. After baking I topped it with a drizzle of aged, syrupy balsamic. SO GOOD! This is by far my favorite flatbread combo ever.

I’ve been searching my local TJs for the frozen figs ever since you first posted about them, but I don’t think they’ve made it to the Chicago market yet. Fingers crossed that they’ll be here soon — a fig smoothie sounds amazing!

Love figs! They are so tasty with goat cheese. Your flatbread is a great idea 🙂 I’m going to search for the frozen ones the next time I got to Trader Joes.
I love topping my pizza/flatbreads with basil pesto, roasted cherry tomatoes, and parm. So good!

Frozen figs at TJ’s…OMG I need to find these babies and add them to the breakfast routine! I love that flatbread combo and you can pretty much never go wrong with those flavors. Have a beautiful day! <3

I’ve been digging the cold penne pasta salads with roasted cherry tomatoes and pesto. I think I need to add more roasted veg to it, but I’m in a slump…what else would go well with this combo?

Love figs! I don’t tolerate dates well, so figs are my go to substitute.

I’ve actually never tried fresh figs, but I am absolutely obsessed with dried figs! I should check out the frozen TJs figs though.
My flatbread go-to is moz, tomato and basil. However, I also really love apricot preserves, feta, prosciutto, and arugula. Yum!

I never eat figs. No real reason. Just because I never buy them but maybe I will grab the frozen ones from TJ later today…I am so impressed you resisted Frozen yogurt for dinner. I can’t resist my Red Mango frozen yogurt for lunch but when I crave it for dinner, I do try as you did to whip up something in the house and then if I must, get some for dessert. Years ago I would eat frozen yogurt for dinner and then an hour later, start craving real food.
I love figs… fresh ones are so hard to find in PGH though. I use the dried ones for energy bites!

your meals in this post look insane! each one looks more delicious than the next. and, i can’t wait to get to TJ’s and pick up those frozen figs. love the idea to put it on flatbread with prosciutto . one of my favorite ways to use fig jam is to cut wheel of brie in half (so it’s like two sandwich halves), slather fig jam in the middle, wrap in puff pastry and bake it.
