Time for a look at some recent eats! As always, good stuff for ya today. 🙂
Breakfasts/Brunch
I’m not going to show the smoothies (will wait for the challenge week one recap for that) but I have a couple others breakfasts to share.
My favorite breakfast pita with scrambled eggs, spinach, roasted tomatoes, feta and cucumber yogurt in a soft, warm, fluffy pita from Nolen Kitchen. I went for Sunday brunch after teaching yoga.
Banana egg white oatmeal with apple butter and peanut butter. This was my March 31 breakfast before the smoothie challenge started!
Lunch
LOVED this lunch! Turkey wrap and a seasonal salad with strawberries, avocado, walnuts and feta.
Whole Foods salad bar with some of their Sonoma Chicken Salad on top and a kombucha.
I ate this ready to go salad from Trader Joe’s on Monday while I was cooking for my client. It was full of good stuff like edamame, quinoa, chick peas, sunflower seeds and dried cranberries. Need to recreate this combo at home!
Last, a salad with roasted butternut squash, deli chicken, avocado, walnuts, dried cranberries, tomatoes and feta with homemade whole grain honey mustard.
I’ve been all about the salads since the weather has been nicer!
Dinner
Baked flounder with panko, basil pearled couscous and roasted zucchini.
Spinach gnocchi with sauteed mushrooms and shrimp topped with parmesan and truffle oil. Asparagus on the side. This was my favorite dinner of the week. Ah-mazing!
Marinated chicken breast with roasted butternut squash and roasted cauliflower.
And finally, a leftover quinoa stuffed pepper with a nice broccoli slaw I whipped up on the side. It had plain greek yogurt, a little mayo, a little apple cider vinegar, a little sugar, tomatoes, avocado, dried cranberries and sliced almonds.

Those salads looks delicious! They are my go-to lunch. I’ve been craving quinoa lately, and I got some tri-colored quinoa for my salads this week
Do you think here is a way to make your egg white oatmeal in the microwave? Any tips would be appreciated! Thanks!

I have been eating asparagus, refried beans, shrimp, and rotisserie chicken all week…HAHA! Lots of spinach too, but the asparagus have been almost in each of my dinners. I cannot get enough! That Sunday brunch looks DIVINE! XOXO
Everything looks so good. That pita though….yum. How come whenever I try to make breakfast pitas like that nothing stays in and I end up eating soggy pita and scrambled eggs off my plate lol.
Just had to let you know that your April Smoothie Challenge inspired me to make my first ever green smoothie today! I was so very pleasantly surprised. Will definitely have more of these coming especially as the weather warms up in Philly 🙂
