Happy Monday! It was semi-back to normal for me this morning with a 6:30 a.m. training client at the gym. I usually have four in a row on Monday mornings so only having one client was kind of weird! This week will be a little slow for me as a lot of my clients wrap up holiday travel. It’s a blessing because my yoga book is due next Monday so I’ll have some extra hours to work on finishing the manuscript.
Let’s talk recent eats. You probably think I’m going to say they have been clean and healthy after Christmas…but…I’m having a hard time saying no to the Christmas chocolate. I even bought myself more at Publix on Saturday because it was marked down so much. )Side note…these Hershey’s Mint Chocolate Chips will change your life. I have been sneaking handfuls every time I walk by the cabinet! :))
I’m not really stressed about the surplus of sweets over the last couple of weeks. It will all be over and done soon enough so I may as well enjoy it while it lasts…or at least until Valentine’s chocolate rolls around…followed by Easter candy…ha! I have been all about eggs lately! I made this killer ham, egg and cheese sandwich on sourdough the morning after Christmas at my grandmother’s house.
More eggs scrambled with spinach and white cheddar with a side of chicken breakfast sausage, citrus and buttered sourdough toast.
And pumpkin banana oatmeal with a side of fresh cheery flowers!
Salad with spinach, avocado, tofu, sundried tomatoes, goat cheese, sliced almonds and hummus dressing.
Leftovers for lunch before leaving my grandmother’s.
Of course all of the desserts came back out for round two.
I had red velvet cake and a sliver of chocolate pie.
When I got home that night I made a lot of snacks for dinner because I was kind of over big meals. Cheese and crackers, olives, chips and guac and hummus and carrots.
On Saturday night I wanted something that was not “regular food” if that makes any sense so I whipped up a homemade vegetarian burrito bowl with spinach, brown rice, black beans, corn, shredded cheese, salsa, guacamole and plain Greek yogurt.
I was finally in the mood to really cook again last night and made chicken with marsala mushroom sauce, rosemary roasted baby potatoes and green beans. Tonight I am cooking steak, mashed cauliflower and brussels sprouts!
Tell me about your post-holiday eating. What have you been craving? Still have sweets around? How are you feeling?
Looks delicious- as always! Quick question- Have you tried bulletproof coffee yet or have any opinion on it? Just curious- my dad and brother are both super into it (they’re big Crossfitters) but I am interested to hear a woman’s experience/perspective on it as I’m thinking of starting to incorporate it as well!
I have heard tons about it but haven’t bitten the “bullet!” 🙂
I came back to Houston with Christmas cookies and chocolate that were gifts, so I am set for a few weeks. It’s time to go back to eating in moderation. LOL! I’m a little homesick and wish I could have more time to rest, but such is life. Kind of glad it’s a short week again. Eating clean this week until NYE and then back to clean eating after that. HA!
There is definitely no shortage of sweets around, that’s for sure. My uncle made us the most incredible box of Christmas cookies/sweets and I’ve definitely done some damage. Peanut butter brownies are just SO good, I can’t help it!
But I’m totally with you. I love your outlook on this and so appreciate the fact that you aren’t preaching about getting back in the gym and burning off “all those calories”. I can’t stand that approach, and think it totally takes away from the meaning of the holidays!
Cookies and ice cream are still in our fridge, and sometimes it’s hard to turn down that classic cookies n cream or those homemade shortbread cookies. But like you, I’m okay with it. Things end up balancing out, and the sweets overload isn’t forever.
