Welcome to recent eats, photo shoot week edition. Let me sum it up for you…it was NOT EXCITING. Lots of juicing, smoothies, soup, protein and veggies. Not a carb to be seen until we wrapped on Friday (scroll down for the Friday night celebration carb fest). Y’all know I am all about eat all foods in moderation but when you’re spending the week being photographed for a core training book in a sports bra and tight pants, a little clean eating is in order…especially when you’ve just arrived home from 9 days in Mexico full of guacamole and margaritas. Although the timing wasn’t exactly desirable, at least I had a tan for the shoot! 😉
Breakfast
Smoothies or juice every day with a side of dandelion tea, which is good for digestion.
Annnddd that’s all I’ve got for breakfast. Like I said, super exciting.
Lunch
Lots of salads and smoothies. I had a lunch meeting on Thursday at Crisp. I love their build your own salads. Spinach, chick peas, hard boiled egg, dried cranberries, pears, blue cheese and walnuts with honey mustard vinaigrette.
Dinner
Dinners were still delicious this week but just more low-carb focused. I loved this beef short rib over spaghetti squash with roasted asparagus. I got the short rib on a crazy good deal at the farmers market last week. I cooked it long and slow with red wine, onions and garlic. So good.
Salad with grilled chicken. Out with friends.
Chicken cacciatore with sauteed baby bok choy and roasted cauliflower. I picked up these chicken leg/thigh quarters at the farmers market. This is easily one of the simplest and best chicken dishes that I have made in a very long time. Cooking with bone-in chicken v. boneless/skinless adds flavor like no other.
We wrapped photography at 5:30 p.m. on Friday. I immediately drove to the store and picked up wine and all the ingredients for homemade pizza.
My combo was wheat dough with hot chicken italian sausage, artichokes and sundried tomatoes with lots of cheese. Kale and spinach salad on the side.
I LOVE FRIDAY PIZZA NIGHT!
Etc.
My Cascadian Farm Protein bars were a life saver for my afternoon shoots. I ate one every day during the shoot.
What’s more fun than protein bars? Cupcakes. I was very pleased to received a delivery of assorted chocolate cupcakes on Friday night! 🙂
What’s your favorite Friday night food?
A glass of wine with chips and guac on Friday night is always good. Sometimes we make our own homemade quesadillas if we’re feeling crazy 🙂
mexican is always a tasty “relaxing” night kind of food.
Homemade pizza and beer is the perfect Friday night meal.
YES!!!
Which brand dandelion tea do you like?
I have been buying Traditional Medicinals Dandelion Root Tea
Your food looks incredible still – especially your homemade pizza. Recipe!?
no recipe! i just use a pre-made tough from harris teeter or trader joes and then roll it out and go with whatever toppings i’m feeling. my two tips are to roll out the dough and prebake it on a hot pizza stone for about 5-7 minutes before pulling it out and topping it and baking again. hot oven, start at 450 and then bring it down to 425 once you put the pizza in and preheat the baking stone with the oven.
My favorite Friday night meal is take out of any kind. After a long week of work, not cooking is nice.
i hear you on that!
random question, what do you think about apple cider vinegar? I have heard you should drink some every day…do you? Thoughts?
i have heard that too but i don’t do it. i just started with the hot lemon water and that’s been nice. it’s supposed to be a natural diuretic and help with digestion.
Yummy looking cupcakes! I love sour patch kids for my treat on Friday!
Mmmm Friday night is always grilled pizza night at my place 🙂
love it! what’s your fave combo?
Those cupcakes look pretty good, how did they taste?
Do you have a good recipe for a honey mustard vinaigrette?
I’m looking forward to baby bok choy from my garden this summer. Really miss all the home grown fresh greens from the garden during the looong winter.
they were delicious! 🙂
when i make honey mustard i do a mix of plain greek yogurt, dijon mustard, lemon juice and a little olive oil.
Cannot wait to see the photos…I am going to have to do the same thing in a few weeks. I need to remember to get a spray tan. 😉 Oh those cupcakes and pizza look divine and I am sure the wine was just as good too…
haha, the tan is KEY!
i’m glad you had a good weekend. you lamb burger looked AWESOME!
Yum! Who were the cupcakes from?
Wow what a delicious delivery! That Oreo cupcake looks GREAT!
And right now, fish is definitely my favorite meal on Friday nights 🙂 Any kind of seafood! I love anything baked and lightly seasoned (nothing fried for my stomach). So perfect!
Yea Cupcakes. If only they made protein filled cupcakes in bakeries…then life would be complete. In the meantime I will continue to make my own! Can’t wait to see the pics!
I have not had chicken cacciatore in years. Would love the recipe?
Wait a minute .. pizza AND delivered cupcakes ?!?!?!?! .. Girl, you are livin’ right :o) LOL
