Happy weekend!
I have almost a full week of eats to share with you. I think I did a good job mixing it up a little bit this week and breaking out of all my same patterns. You’ll see some different breakfasts, new salad combos at lunch and a dinner using the crock pot. I’m still over cold weather food but making the most of it while it lasts. I went to the farmers market this morning while I did get some nice local meat, it was pretty slim pickings as far as fresh produce goes. Fingers crossed that changes here in the next month or so.
Breakfast
Trader Joe’s GF waffle with peanut butter, honey and banana with coffee. The waffle is a nice way to switch up toast. I had a fresh juice later with beets, carrots, kale, spinach, parsley, cucumber, ginger and apple.
A peanut butter and banana muffin with a green (purple) smoothie and dandelion tea.
Lunch
Salad with spinach, leftover roasted butternut squash, toasted pecans, avocado, honey goat cheese, dried cranberries and maple dijon balsamic vinaigrette.
Chicken tortilla soup defrosted from the freezer. Topped with cheese, avocado and plain greek yogurt and served with chips.
Another salad with arugula, spinach, deli chicken, leftover roasted butternut squash, gorgonzola, toasted walnuts, dried cranberries, avocado, pears and maple dijon balsamic vinaigrette. Loved switching up the cheese with the gorgonzola. Gave it a kick!
Dinner
Panko parmesan crusted chicken tenders with roasted asparagus and potatoes. Recipe coming next week for the chicken.
Balsamic glazed crockpot pork tenderloin with roasted butternut squash and shredded brussels sprouts. I had many requests for this pork recipe on Instagram. It was super simple. I’ll work on getting it up for you!

And this would be “ran out of inspiration to cook” Friday night soup and grilled cheese. The soup was from Berrybrook Farm and it’s probably my favorite soup in Charlotte.
It’s so wonderful! They only make it a few times a month and I hardly ever go there so when the stars align and I’m there when they have the soup, I get a big container of it.
What was the best thing you cooked last week? Hmm…hard to choose but it’s between the PB & B muffins and the pulled pork.
I didn’t cook much last week, but I did make chocolate chip cookies 😛

The best thing I cooked last week? I think it was the pans seared scallops I cooked! But they made me sick! No more seafood for me for a while!

That sushi looked AMAZING!! The best thing I made was probably my grilled chicken pizza. It wasn’t anything fancy but it was delicious and easy to make!

You can never go wrong with pulled pork! I’m trying a new recipe this week using spaghetti squash to change it up a bit and make dinner easy on those later nights. Enjoy the rest of your weekend! XO

I cooked some yummy chili and made some nice salads for lunch. This week I added a grain to my salads, which kept me more satisfied.

I was just wondering … do you eat snacks as well in between your breakfast and lunch and then lunch and dinner? I am looking for some different ways to mix up my snacks 🙂
hey kaylyn – i do not typically snack between breakfast and lunch unless i eat breakfast REALLY early. i do snack between lunch and dinner because it’s usually about 7-8 hours between the meals for me. often i have an apple, apple with PB or some kind of bar around 4-4:30 and then cheese and crackers while i’m prepping dinner.
Your food always looks SO good!! And I’m definitely baking those muffins, yum!
Best thing I made this week was home-made pizza on Friday night 🙂
