Happy Friday!
My mom arrived in Charlotte yesterday so I’m happy to have her here for a while pre-baby. The plans for this weekend include picking a new nursery wall paint color (the saga continues…we’ve decided to change the wall color again instead of the trim), getting the hospital bag checked, installing a car seat in one of the cars and my first baby shower!
It’s been a minute since I’ve done a recent eats round up so I put one together for you this morning along with a couple cute photos of the girls at the end because…I can’t help myself!
BREAKFAST
Banana cottage cheese oatmeal topped with chai and coconut peanut butter.
A mix of Cascadian Farm vanilla chia crunch and graham crunch cereal with banana and almond milk.
Smoothie bowl with homemade peanut butter granola.
LUNCH
Lunch out with my girl Leslie Ann of Fat Loss Foodies at YAFO. I had a half salad/half hummus bowl. There is a huge pile of hummus under the salad toppings. Their homemade laffa bread is to die for.
Lunch was delicious, conversation was even better! I love the work that Leslie Ann is doing around educating women on how to cook and how to fuel their bodies.
A little bit of everything salad bowl. Massaged kale, shredded cheese, leftover rice, canned salmon, cashews, dried cranberries, avocado, strawberries and tahini turmeric dressing.
My favorite foods all on one plate. Bread + avocado + cheese, chips, pineapple and grapes. All big pregnancy cravings for me!

Another day, another sandwich.
Lunch out with a friend at Earl’s Grocery. I had a salad with kale, beets, farro, chicken, feta, avocado and currants.
And then came home and also had a piece of sourdough with cashew butter, honey, sea salt and bananas. Remember when I ate this all the time in the first trimester before announcing I was pregnant?
DINNER
After several months hiatus, I got back on the salmon train. Quick recipe…I seasoned two salmon fillets with Trader Joe’s lemon pepper grinder and a garlic herb seasoning. Topped it with a few pats of salted butter and lemon wedges and then baked for about 20-25 minutes on 350.
In true pregnancy fashion, I was like…if I’m having fish…I’m having pasta too. 🙂 I served it with spinach tortellini that I tossed with artichoke hearts and marinara sauce. I also put the salmon on a bed of massaged kale so I could feel healthier about it.
More pasta…frozen mushroom truffle ravioli from Whole Foods topped with marinara sauce, mushrooms and artichoke hearts.
A VERY random creation of leftover corned beef scrambled with an egg and topped with cheese and heated under the broiler. It was delicious. I had some leftover cabbage and potatoes on the side but wasn’t really feeling it.
I met Dorie and some friends for dinner one night at Namastay Kitchen and had a salmon salad.
And finally, for my mom’s first night in town we kept it simple with rotisserie chicken, sauteed mushrooms, roasted potatoes and roasted broccoli.
ETC
A stop at Sunflour last week for some goodies. I ate the cupcake that day and froze the morning glory muffin and the cheddar biscuit. I’ve since eaten the muffin but haven’t tried the biscuit yet. I’ve heard amazing things about them so I’m eager to. I might use it to make an egg sandwich.
GIRLS
I am NEVER alone with these two. They stay in the office with me while I’m working. Zoey loves to get under my desk. I thought this was so cute of them butt-to-butt with the desk between them.
One more…Zoey is the biggest ham and is so needy for attention. The other night she was smushing her face between my feet so that I would rub her with my feet. She will take pats however she can get them. Love her.

Go see Frank at Eastway paints (by the Chef store). Take pictures of the room on your phone in different light, the fabrics you plan to use even if they are screen shots. He’s AMAZING and can lead you down the right path. His crew is great too and can help if he’s not there. They truly are design professionals.

Question–is that farm raised or wild salmon? What are your thoughts on that? I know it’s a heated debate, and I always wonder!

my dogs get jealous of one another, so if ones getting attention the other will come up and put her face under your arm to throw it off the other pup. ha!
I was eating so much PB on toast at the beginning of my pregnancy that my husband and I have a bet going on how many jars I will crush before the baby arrives…embarrassing haha!
I love that kale salad at earls but it was so much better when they used golden beets! I keep hoping they will bring them back…womp womp!
Zoey totally does the same thing if Sullie is getting attention. Sullie is more chill!
